New Year's Eve at my parents' house. I brought Miyazumi Hatsu Shibori nigori sake and Banshu Issen. I chilled them in the freezer right before, but the lid blew off! The sweetness and acidity are better balanced at room temperature, and the sake goes down a treat. It's sushwewty, sweet, mildly bitter, and delicious! I'm not a big fan of fire-aged sake, including Sharaku, but the nama-zake is excellent!

I opened a bottle of Izumo Fuji Nigori, which I was curious about in the sakelabo distribution 🍶. The supernatant has an unexpectedly strong gassy and dry taste. The lingering aftertaste, which is a little bit alty, will probably change. While drinking the supernatant, it is naturally stirred. It's like a snow globe 😊. After stirring, the sweetness does not stand out and remains dry, while the acidity has become more rounded. It's the kind you can drink Swiss chard with a clean aftertaste. I wonder if it will get sweeter after a few days.

And that first squeezing of Houou Mita was too good! It disappeared in 2 days ∑. Next was the first Sairai. I was finally able to pick it up. It has a sweet aroma with a hint of cemedine. The top clear liquid has a berry-like sweet and sour taste with a slightly bitter aftertaste. It is quite cute (a mysterious expression) and delicious. When stirred, the sweetness first becomes stronger, and the transition from sourness to bitterness becomes clearer. The acidity is the main flavor, but Koeikiku is citrusy and Sairai is berry-like. Let's drink slowly to see the changes.

Cold chrysanthemum white silver sea, gone in 3 days 😭. Now for a change, sake nouveau, the new sake! Last year I was curious about it but the timing wasn't right and it was heki-ban, but this year I was able to pick it up. My fridge is overflowing! The aroma is subdued, and when you put it in your mouth, the fresh acidity and fruity sweetness typical of new sake fills your mouth. A slight bitterness can be felt in the middle part of the bottle, but it is soon replaced by umami and gradually soaks into the palate. Hououmida has a great sense of stability and perfection. Heki-ban was juicy and delicious, but I love this one too!

Hey, this is too good! ∑It's too good! I had high expectations for this first nigori sake with the same specs as Ginkai (Departure), but it was so far above and beyond that I lost my vocabulary. The carbonation and bright acidity made it dry and silky for a moment, followed by the usual Kangiku-like sweetness and flavor, which slowly seeped into the tongue with a hint of bitterness. It is the kind of sake that can be drunk on its own in no time, without the need for an appetizer. Come to think of it, someone once described it as an adult's calpis soda, and it certainly makes sense.

It was so good that I drank up all the yellow electric chrysanthemum in a week. Is my liver OK? I'm in perfect physical condition, so I'm going to start my "orikagarami" today! As soon as you put it in your mouth, you can feel the gassy, dense, and gorgeous sweetness spreading at once. The acidity increases in the latter half of the bottle and gradually seeps into the tongue along with a slight bitterness. Compared to the yellow wine, which has a refreshing aftertaste, the ogara-mi has a long aftertaste. I like both of them. The yellow was completed 4~5 days after opening, so I wonder if this one will be completed over the weekend too. I'm looking forward to it!

I was not able to buy this yellow electric chrysanthemum last year due to purchase restrictions. I was able to buy them over a year ago! I wrote in a post exactly one year ago that I wanted to buy both in one bottle next year, and it seems I got my wish 😁. As you can see from the rich sweet aroma, it has a sticky mouthfeel with a slight sourness behind the sweetness. The aftertaste is clean and the umami lingers in the mouth and can be enjoyed for a long time. I was hooked by the taste of last year's Densho-Kiku Ooragarami and have followed it for a year as much as possible. It is available locally and at a great price, so it has become a regular sake in our house that is never out of place. We are looking forward to a new Orikagarami product coming out next month.

Slightly gassy, fruity acidity, umami! Even the slight alu feeling through the nose is pleasant. It has a round mouthfeel, and is a wonderful bottle that combines the goodness of fire-roasting and freshness. I'm drunk after drinking all the Kangiku, so I'm sorry if I'm off the mark. I always drink Kangiku, but this Monochrome is new to me. I heard that the rice has been changed to Yamashu No. 4 this year, but in any case, it is my first time drinking it, so I can't compare the two. It has a moderate acidity and, as is typical of Kangiku, a sweetness and umami that is more gorgeous than usual. It is really great that every sake has a core that is typical of Kangiku and expresses different scenes with subtle changes in nuance! As the concept suggests, it is perfect for drinking on a cool autumn evening while reminiscing about summer 😊.

Red Kikyo, which I failed to buy last time, was reintroduced and I quickly acquired it. The description of a certain izakaya said that it was a challenging bottle focusing on acidity, and that it was inspired by Akita's progressive spirit. Indeed, the acidity is outstanding and the taste is quite similar to the A-TYPE we drank last month. Since it is a draft sake, we will drink it and look forward to the changes 😊.

Kangiku is no longer a definite must-have. We have great confidence in them, including the fact that we can buy them locally. The last of the Kangiku summer sake trilogy. Sorakai→Aokkai→Ookkai. The subtitle of the trilogy is "ARRIVAL" and it is now complete. Kukai has a pronounced acidity, Aokai has a gentle and clear flavor, and Chokai tastes like a middle ground between the previous two. The Kukai's acidity is calming and its umami has been fully absorbed. The juicy umami and the bitterness at the end are common to the trilogy. I am very happy that I was able to enjoy all three bottles in one bottle this summer. I hope I can buy a bottle of chrome at the end of the month!

I opened the bottle because it had been a while since I was able to drink with sake friends. This is my first sake with a cork! I chilled it in the freezer for a while and opened the bottle. It opened without spilling. The bubbles keep coming out like champagne. The acidity is felt and the umami spreads with the carbonation. I couldn't keep up with my vocabulary any longer, and my friends and I just kept saying it was delicious and kept drinking it.

happy birthday to me🎉. I've been busy with Corona. I'm going to reward myself by opening a bottle! Almost no aroma. I was expecting a calm, sweet and delicious image of junmai ginjo-namaishu, but it is quite different. Kangiku ocean99The fruity acidity spreads like the blue sea and slowly seeps in, with a slight bitterness at the end.  It is very tasty. Shinshu Kamerei makes you want to take a breather after drinking. It is a soothing sake.

I have had a lot of Kamo Nishiki, but this is my first Tsukishiro. I was somewhat put off by the words "dry" and "suitable for long-term storage," but the trustworthiness of the Kafuda Sake brand won out, and I got a bottle. It is true that it has a noticeable acidity for a pack sake, but it has a crisp mouthfeel and a mellow sweetness like that of a grape.

Fei Lan has been a hot topic lately. Nice to meet you✋. Hirado, Nagasaki PrefectureI heard that it was inspired by the clear sky and horizon, and I thought it looked somewhat like a cold chrysanthemum. There is almost no aroma. The mouthfeel is very clear, and the juicy flavor with soft acidity soaks into the tongue. The acidity spreads three-dimensionally in the latter half of the bottle, and the bitterness tightens it up. It certainly has a similarity to Kangiku's ocean series, and I love it! I will try to catch up with the "Hiran" series. I wish there was a distributor in Oita prefecture since we share Kyushu 😁.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

serial number 128/250 This is the Shinsei we got at the UTAGE. It is the first No.6 to be opened. The aroma is a combination of grapefruit and lactic acid, and the fruity acidity is the first impression. The taste does not change much in the mouth, and the acidity, sweetness, and umami become one lump, soaking into the tongue and disappearing quickly. Although this is the first time for us to taste this sake, it is a bottle with a core of deliciousness and a high degree of perfection. I paired it with mimolette cheese because it had a similar sensation to the acidity of cheese.

Banshu Aizan, Junmai Daiginjo, is a super high spec! And with a sake that has a package tag on top of that, you can't go wrong! It is sweet from the aroma and has a very soft mouthfeel. The sweetness of Aizan spreads slowly and soaks into the mouth with a little acidity. The use of this acidity makes it a very good package tag sake. The slight bitterness in the aftertaste is also good! The lingering aftertaste is short and disappears without a hitch. Thank you again for the stable Kamo Nishiki Kafuda-shu 😊.
