I finally filled Saga Prefecture. It was hard to find sake from Saga. Junmai type, unknown rice polishing ratio. The aroma is fruity with pineapple and caramel, and the taste is sweet, sour and slightly bitter. It was delicious. I would buy it again.
Tokushima Prefecture, I finally found a bottle. It was hard to find. It tastes much better than it looks on the label. It is the type of sake that you can drink more and more of without feeling self-conscious about it.
The second day is the best. It is so fruity, aromatic and voluptuous that it is reminiscent of a slightly sweet Alsatian Gewurztraminer. This Toyo Bijin is the first sake that has so much in common with white wine.
I had a hard time finding a sake from Saitama, so I bought it. I wasn't left with any impression other than a super light umami taste. One that I will not try to drink again.

When I drank it right after opening it, there was nothing to smell or taste except a harsh alcohol taste - > I gave up and put it in the fridge. The next day, first thing in the morning, I gave it another little tease and found it had changed drastically. It smelled like pineapple and became very sweet. What in the world is this? This is the first time I've had a sake that has such a big turnaround.
