It's been a while since I've had the chance to try it, and it brought back nostalgia and memories of that time together like a flashback. This is a comment from a layman who likes to drink. Tsukinoi is one of my favorite sake breweries, and I enjoyed the Hiyaororo, and now I have another brand of Junmai sake called Hikoichi. This time, I had a different brand of Junmai-shu called Hikoichi. It tasted dry and spread from the mouth to the throat, flowing smoothly down the throat and leaving a slight lingering taste of spiciness at the end, which is a must for dry sake lovers. It's not too dry or harsh, and it's not too refreshing. There seems to be some controversy about the new brewer, but as I am only familiar with the new flavor of Tsuki no Ii, I really enjoyed it. It is a stable and solid Junmaishu. The sake is dry with a slight gentle umami flavor that comes through. Wakayama has a lot of plum and fruit wines, but I think this sake and Kido are excellent and represent Wakayama very well. This is just my personal taste, so please forgive me. Finally, on the ingredients label in the photo, there is the name of the master brewer, which is a testament to his high sense of responsibility and confidence in his work. I hope you find it useful.

This is a comment from an amateur sake lover. Banshu Ikken Super Dry Junmai Super Dry Sanyo Cup Shuzo Co. It gives the impression of being a straightforward dry sake. In addition, it has a strong acidity, which gives it a sense of balance characteristic of sake made in western Japan. If my taste buds are wrong, I would be very grateful for your advice. Please forgive me if this is a personal feedback. I have been a fan of Banshu Ikken for the past 10 years, and when I lived in the Kansai region, I was able to get fresh sake and enjoyed it from season to season. Today, I enjoyed tasting it again. I have a sense of nostalgia, a sense of what it should have been like, what it should be like. However, the sake I've tasted recently has no sourness, and I've come to feel that Banshu Ikken has a strong sourness, which I thought I liked, but it's not as refreshing, and I'm feeling a bit bewildered. I'd love to hear your thoughts on this drink. I know this is redundant, but I love this drink and I personally support it. Please understand that I think it is a personal taste problem.
