This is a comment from an amateur sake lover. The other day, I had a wonderful opportunity to taste the entire Niimasa lineup at a certain place in Tokyo. The first one I drank was the unforgettable Niimasa. From the very first sip, I could not hide my surprise at the depth of flavor and the gap between what I thought I was drinking sake and the taste of wine or green apple. It is a sake with a wonderful degree of perfection that transcends the word "delicious. I think many people would not recognize it if it were served in the form of wine instead of sake. It was an evening of tasting innovative sake. It was a day that I appreciated from the bottom of my heart. Thank you very much😊.

Personally, I had the impression that nigori sake is sweet, but this Hikkami is completely different. It has a perfect balance of dryness and umami, and it is very refreshing, making it a great pairing with sushi. The fish and rice do not fight with each other and coexist well. Today I had a chance to taste this sake for the first time at the Shinjuku Takashimaya Department Store where the Yokota Sake Brewery was promoting their product. It is a summer sake with a very robust rice flavor. The alcohol content is 15%, which is moderate. It is a strong sake that does not lose its strength to any meal. It gave me energy. This is a comment from an amateur drinker. I got this Amego no Tsuki from a friend in Hiroshima. I enjoy it very much. It is a daiginjo with depth of flavor and a gorgeous aroma. It has a sweetness like a pear, and the exquisite taste is wonderful, as one would expect from Amego no Tsuki. As a trivia, Kure City has the largest concentration of sake breweries in Hiroshima Prefecture, more than Nishishino. Just FYI. We are thankful to be able to drink delicious sake again today.
