This will be a comment from an amateur sake lover. When I was about 20 years old, I drank a bottle of Hachiman River sake and was impressed by its taste. At that time, it was Junmai Daiginjo. It had been a while since I went back to my parents' house, so I visited the brewery in person and purchased this sake. I was told that this year's production was the best. It was truly the best in many ways! It was nostalgic and thoughtful, reminding me of my own sake roots. I am thankful that I was able to drink good sake today and in good health. Tonight, we will toast to Yawatagawa with a side of Hiroshima koiwashi!

This is a comment from an amateur sake lover. The other day, I was recommended this sake at my favorite soba restaurant. It was exactly my kind of sake. It was masculine, strong, and dry. Although it was fire-aged, I could feel the strength of the alcohol. It is rare for me to drink sake from Kyushu, so I enjoyed it very much. It went well with the tempura at the soba restaurant, and the flavor was not overpowered! I am thankful that I was able to encounter such wonderful sake this evening as well! I was kind of a straight guy, despite the fact that I am a manly type of drinker. I am thankful that I can drink good sake.

It is not like a sake made from a sake yeast yeast yeast, but the sweetness of rice spread out. The strength of the rice shines through in this sake. This will be a comment from an amateur sake lover. Today I had a sake that was being offered for tasting and sale at Matsuzakaya in Ueno on a temporary basis. Dry is exactly what it is, but the balance of umami, acidity, and aroma are mixed together to create a wonderful sake with a wonderful harmony. The aroma is more pronounced when drunk in a wine glass. I heard that this sake is a new attempt, but it creates a new dry taste and is a new dry genre. I am thankful to have found another delicious sake tonight. ☺️

This is a comment from an amateur sake lover. Today I opened a bottle of Shinmasa that had been stored in the fridge and had not been drunk for almost 2 years. I have had other Niimasa, but this is the first time for me. At first it seemed sweet, but gradually the taste settled down and the thickness of the raw yeast production and the fresh, slightly carbonated taste of the sake spread to the palate, making it an appealing sake that makes you want to drink more and more. I feel happy to be able to enjoy another delicious sake today. I worked hard on the snacks!
