This one we put the remaining half bottle in the fridge after 2 months of maturation. The rice thrust has a beautiful acidity and an elegant balanced cut. It's nothing like when it was first opened. You can try it after two months of maturation. It goes well with Wagyu beef sashimi. Rating: 92/100

Moonlight would have to be my favorite of the Hikari Eiku's I've had. The acidity is balanced and it has a very clean rice flavor. The food I paired it with yesterday was octopus, an unexpectedly good combination. Rating: 93/100

It's amazing, and feels nothing like I expected! This is a special edition of Fairy Bird Tanabata, limited to 777. the main rice is Turtle Tail, a blend of three noble brews from the 2017 Bottle Maturation + 2019 + 2021. The wine is slightly cloudy with strong bubbles. The aroma is high ancient and light, complex and varied. The palate has a champagne feel with bubbles bouncing around in the mouth and the aftertaste contains an ancient rice purpose flavor, premium elegance. Very stunning! Rating: 96/100
