When mixed with the lees, it has just the right amount of spiciness and umami to make an adult calpis 🥛.

As the name suggests, it is fresh and light, with a refreshing acidity, followed by a hint of sweetness and a strong umami taste 🍶.
It also has a strong alcoholic taste, which is something I have never experienced before 😚.
When I asked the owner if I could try a nigori, this was the first thing he recommended 🍶.
The supernatant has a strong sweetness, but when mixed with the lees, the umami combined with the sweetness makes it even easier to drink and tastes even better! It was a new discovery 😋.
