The last sake of the year was a bottle of Hakutemi 🍶. My wife worked late after work and fried tempura for me and we had it with New Year's Eve soba noodles 🙏. It was at room temperature, but the moderate sweetness and slight bubbles went perfectly with the tempura 🥳. I will continue to enjoy sake with an inquiring mind so that I can encounter a variety of sake next year 🐇.

We had it again this year! Kitajima Oorigarami, which we both like. The supernatant is sparkling and bubbly! When mixed with the lees, it has just the right amount of spiciness and umami to make an adult calpis 🥛. This year it was a bit on the dry side, but it was consistently delicious 😙.

The owner's recommendation following the other day! As the name suggests, it is fresh and light, with a refreshing acidity, followed by a hint of sweetness and a strong umami taste 🍶. It also has a strong alcoholic taste, which is something I have never experienced before 😚.

When I asked the owner if I could try a nigori, this was the first thing he recommended 🍶. The supernatant has a strong sweetness, but when mixed with the lees, the umami combined with the sweetness makes it even easier to drink and tastes even better! It was a new discovery 😋.

It is hot and humid, but it is autumn, so I will have hiyaoroshi. I didn't know what hiyaoroshi was a year ago, and I didn't know much about it this year either.
