Kana Maki
Appearance: Sound, transparent, pale yellow, medium viscosity
Nose Sound oily magic, steamed rice, cooked rice, slightly caramelized, grainy and puffy, medium height of aroma
Mouth: Sound Texture is smooth and smooth with a little sharpness, initially sour, reminiscent of grainy vinegar rather than citrus, followed by caramel sweetness. Afterwards you can sense the umami and faint bitterness. The aroma is medium, with a caramel sweetness and bitterness, and a full aroma like cooked rice. It has a slightly bitter taste on the back end, which is perceived as tightening up. Medium to slightly dry.
It's not Junmai, so you can't call it Junmai, but the brewing process itself is Junmai. It's overwhelmingly good value! It has a solid acidity, sweetness and umami. It's not hard to drink, but it's not suitable for people who are used to drinking light sake.
