Kana Maki
Appearance: Sound, transparent, high, light yellow, medium viscosity
Nose: Sound, medium strength, medium caramel, cream, custard, white sugar, honey, faint hints of soy sauce, sweet notes of sugar and dairy products, faintly savory notes, slightly complex
Mouth: Sound texture, smooth and smooth, it goes in smoothly, with an initial sense of acidity and bitterness, but it is followed by umami and sweetness. Long lasting, medium sweet and spicy.
At room temperature, the aroma is less sweet than the initial impression. The 90-polished "Kin Kame Ao 90 Nama Shochu" is sweeter. My impression of it changes after warming it up again!
PS When I leave it for a few days and make it cold (around 15 degrees), an aroma like the rice bran stands up. I don't think it's best not to chill it too much after leaving it for a few days.
