The first drink I received back home. Fukushima sake has almost never betrayed me. This one is also a junmai daiginjo with a slightly concentrated fruitiness rather than the fruity flavor that is so popular nowadays, and it comes in easily after the elegant ginjo aroma. With a clean aftertaste, this sake was almost perfect as a food sake.

Hachitan Wataru Junmai Daiginjo It starts with an elegant and subtle ginjo aroma, and has just the right balance of acidity and sweetness. It has a sharp, light aftertaste that does not interfere with meals. This was the fourth sake at Neo Kaku-uchi. All of them are excellent sakes, and I wonder how much they would cost at an izakaya.

I went to a neo corner bar in Kitasenju, which I had long wanted to visit. It is a sake bar with a famous sake store. It has a super stylish appearance. The restaurant's evaluation of the sake was "gentle, refreshing, and gorgeous aroma with a refreshing acidity and a slightly dry impression at the end. It also had a refreshing fruity sweetness that had me hooked from the very first glass.

I don't understand Aiyama sake rice that well, but this sake was badass. It starts with the freshness of the raw sake (some carbonation), and then the sweetness, richness, and slightly acidic fruitiness that is the perfect word for enraptured. This is a little too awesome to describe further! This is a limited quantity product only available at this time of the year. I recommend it without question.

Three excellent wines in a row, somewhat numbing to the palate, but very well balanced. I enjoy it with sakura shrimps kakiage (fried sakura shrimps). It was a sake that I can recommend to everyone, with a feeling of melon-like freshness in the mouth that is not too sweet.

Without much recognition of the fact that it is a representative brand of Yamanashi, I have it at a small counter restaurant in my neighborhood. The attack is extremely soft, and the moderate acidity and sweetness that are so popular these days cover the palate pleasantly. It is not too assertive, and can be enjoyed as it is or as an in-between-dinner drink. We enjoyed it with a snack of red clams and had a happy time at the end of the year.

Of the many breweries in Niigata, this was my first experience with this brewery. Pair it with a very light pork kakuni. It has a clean aroma and a moderate richness. It is a good food sake to be paired with slightly sweet foods.

Rice polishing ratio 55 Alcohol content 15 A famous sake from Chikusei City, made from 100% Kame-no-o rice produced in Ibaraki Prefecture. It has a moderate mix of richness, acidity, and sweetness, and goes well with relatively light nabe dishes. The brewery says, "While maintaining the traditions that have been handed down since the Edo period, we are always challenging ourselves to create new sake and strive to produce the best quality sake possible." The quality of the sake is superb. It is a masterpiece.

This is a mellow, unfiltered sake. This is my fourth cup today, and it goes perfectly with sweet tsukune. The acidity is low and the umami flavor lingers in the aftertaste. I value the diversity of breweries like this in Tokyo.

A fizzy liquor that remains on its lees. Sourness, sweetness, and carbonation slightly like leeska in the mouth. Just a very good balance of umami, freshness, and acidity. This was a beautiful sake that lived up to the beauty of the bottle. The brewery is located in Mine City, but the Yamaguchi Prefecture is still to be feared.

Nishi Shuzo, the brewer of Tomino Hozan, learned to make this sake from Takagi Shuzo of Jyushiyo (apparently a senior and junior relationship at Tokyo University of Agriculture). It seems that Kagoshima has not had sake for a long time, but when I drank it, I could not believe it was a very tropical sake (excuse me!). It was a delicate and smooth sake. It is quite impressive.

Revisited a nearby soba noodle restaurant. The sake lineup here is bad. Since the app's map of Japan was skewed toward the east, we decided to attack the west today. First up was Saga's Tocho. It is more mellow, but also has a slightly restrained acidity nuance, and is the first sake of the winter to go with the plump shrimp tempura.

Sentori means "crane. It is said to be made from 100% Yamadanishiki produced in Sakura City, 60% polished rice. 100% Yamadanishiki produced in Sakura City, 60% polished rice, 14% alcohol by volume. The citrusy attack, typical of Sentori, is not so strong, and the name "innocent" is understandable. It seems to open up a new world of sake.
