100% Hyogo Yume Nishiki Polishing ratio 55 Alcohol content 17%. This is a product with a traditional structure that is both robust and sharp. The moment the bottle is opened, it has a slightly strong aroma with little of the acidity and fruitiness that is so popular these days, and is like a sharp, smoky silver rocker of yesteryear.

Indeed, the softness of the soft water seems to be the perfect esophageal comfort for a late-night home reset sake. The moderate acidity and fullness leave a pleasant aftertaste.

One of my favorite breweries from last year. Purchased just before the Setagaya Pay points redemption ends today. It has a gorgeous, slightly sweet ginjo aroma, a fruit-like acidity that does not betray itself, and a clean finish. I think everyone likes this kind of sake.

The Moayashimon Collaboration Series purchased at the Tokyo University of Agriculture Co-op. Not one cup, but one can⁈ Polishing ratio 50%, 15%. Light and slightly dry, with a slightly sweet but refreshing rice aftertaste. Looking forward to the rest of the cans in this series!

Got it at the Tokyo University of Agriculture's Setagaya Daita store "Nou-no-Kura". I saw a customer buying an adult last week and bought it yesterday. It is a cosy food sake, just in between light and mellow, not deeply aromatic, not very delicate, but not clashing anywhere, and just right. It's a good sake to have on hand.

It has a pleasant taste with a light richness and an elegant sweetness that is not cloying. The alcohol content is not too high for a pure sake, so it is suitable as a food sake with strong flavored dishes.

Get it at the Tokyo University of Agriculture Antenna Shop at Setagaya-Daita Station. It is said to be light, dry, and refreshing, but it also comes with a thicker taste due to its 65% rice polishing ratio and 19% alcohol by volume. 1100 yen is a reasonable price, and thanks to the University of Agriculture, this level of Horai-sen sake is available in Tokyo.

Obtained at the Tokyo University of Agriculture's Harvest Festival. It is one of the six brands brewed with Princess Michiko yeast, which is also sold at the University of Agriculture's antenna store in Setagaya-Daita. I bought it immediately because I happened to be familiar with Horaisen from Okumikawa. It is said that the rose yeast brewed with Princess Michiko yeast has a sweet aroma, but it is not too strong and is surprisingly refreshing even during a meal. It is a little different from the atmosphere of "Sora," but I think it is best to drink it in late autumn with autumnal mountain delicacies.

I get it at a soba noodle shop in my neighborhood. It is very refreshing and goes well with the satsuma-age (fried fish cake) and wasabi (a type of fish cake) which we had before the soba.

Found at a nearby soba noodle shop. First of all, we were impressed by the spirit of the people who continue to make it in Yamagata for the reconstruction of Kumamoto Castle, which collapsed after the Kumamoto earthquake. It is an unfiltered, unpasteurized sake with a very rich and sweet attack, which may be different for different tastes, but it is interesting as a second or later sake to drink in autumn.

It is a perfect sake for a meal with no cloying taste and a certain richness, just as it is said to be refreshing and wine-like.
