The fact that it is brewed by three graduates of Tokyo University of Agriculture in the neighborhood makes it even more approachable. It is characterized by a full-bodied acidity and deep umami. The umami is strong enough to clash slightly with some meals. Or is it an 8th generation sake? It can be said to be one of the 7th or 8th generation of Japanese sake.
