We first had it cold. Very refreshing sake. It had a calm and beautiful taste. By the way, according to the website, it has "a rich umami that reminds you of overflowing passion and a refreshing acidity that reminds you of your first love". Is it "first love"? Isn't the taste a little too beautiful for that? I don't remember first love like that. It is too mature to talk about "passion! So I tried it lukewarm. The sweetness spreading softly was emphasized, followed by a mild acidity. The slight bitterness that lingers in the aftertaste... I'm sure it's this one! This is it! I was convinced on my own.

I was planning to buy a dry one, but the impact of -30% sake made me buy it. When I opened the lid, the yeast woke up at once. Bubbles were rising from the bottom of the bottle. When I put it in my mouth, I felt a pleasant bubbling sensation. There is no impression that the sake is as sweet as the sake level, and the aftertaste is rather refreshing. Is the high sake level partly due to the unrefined sake? I will learn more about this from now on. It is indeed sweet and sour, but it seems to go well with meals. By the way, I enjoyed it with sour pickled sours and other sour foods.

Ponshukan is always a fun place to visit. A parade of "limited edition" and "ogara-mi nama sake" caught my attention. Without any prior knowledge, I decided on this one immediately. First, the supernatant. The lid was opened and I sipped it without paying attention to anything, and I was pleasantly surprised to feel a slight bubbling sensation. I was completely caught off guard, so I felt like I was waking up. Then, a gorgeous acidity. I took another sip after adding a drizzle of ori. The gorgeousness became even more lively, and I was enveloped in a sense of happiness. The bitter taste was pleasant to my taste buds and brain, which had already been paralyzed by the pleasant sensation. It soaked into my tired body after the weekend.

Since there have been a lot of sweet cold brews recently, I decided to change things up. The first day The first day I went to the supermarket and had a bottle of the "light" and "dry" style. The POP described it as light and dry, but I got the impression that it was full-bodied and deliciously spicy. However, it was not too strong and would go well with a variety of dishes. We actually enjoyed it with squid and taro stew (sweet and spicy), amazu ankake (sweet and sour), and yodarechicken (spicy). The second day We chilled it in the refrigerator. The full-bodied flavor became milder and the impression was more refreshing. It has a soft sweetness in it. Personally, I prefer it at room temperature. It washed out the fat of the silver cod in a good way.

The spoils of war in Akita. Sake brewed with rice, koji and grapes that I was curious about. Other brewed sake. When poured, it has a rosé-like color. When you put it in your mouth, you get the impression that it is a sweet sake. It gives the impression of a sweet sake. But its acidity and fruity taste are completely different from those of sake. It is strange and interesting! The 500ml bottle is small in volume, so it quickly turned into an empty bottle.

The magnificent phrase, "Sake as sweet as nectar, dedicated to the dragon that eats in the haze," is aptly described. The toji's confidence and enthusiasm are evident in this sake. The fruity and refreshing sweetness makes it easy to drink. Since it was so much fun to drink, I compared it with Myonobu, which I had some left over. The sake level, acidity, and amino acidity are similar, but Senryu is fresher and Myonen is deeper. The Senryu is more budget-friendly, costing only 1,650 yen for a four-pack, so it is hard to decide which one to buy the next time these two bottles are on display.

At Akita Kurasu, a sake bar in the Akita Station Building. We were hoping to get a chance to try the Shinmasa, but unfortunately it was SOLD OUT. I changed my mind and ordered my first A-Sakura. Attracted by the words "recommended," I chose a lukewarm sake, which I usually don't drink! It's nice to be able to try something you wouldn't normally choose ✨. And what's more, it was a "men's day", which was a nice touch. The price is very reasonable even if you include the iburigakko (pickled ginger)! This is my first A-Sakura, and the moment I put it in my mouth, the spiciness spreads. I thought the sweetness would be enhanced by the warmed sake, but I was a bit surprised by the powerful spiciness. (Maybe my tongue was numb to it.) But it made me feel warm and fuzzy. But it made me feel warm and toasty, both physically and mentally.

This was my first Eiko-Fuji since I started working at Sake-no-Wawa. I was excited when I saw a bottle on display with a cute label that I had always seen here! The first glass I poured without thinking was a bit too big for my expectations, and I was left with a "hmmm" impression. However, the second cup, which I poured after mixing the corkage thoroughly, was something else. The luscious flavor with just the right amount of acidity was exquisite! No wonder it is so popular.

While it was snowing, I stopped by a liquor store to look for something. The pure white label is impressive. I didn't recognize it as Kamikigen at first glance. It reminded me of the snow piling up outside, so I bought a bottle. This sake is made with the hope that it will be a bridge to the food. By the way, today's snack is a turnip. I couldn't resist buying it because it sounded "new.

We had it as a food wine. What kind of fruit is it?" What kind of fruit is it? Green apple? I think it was classified as "slightly dry," but my tongue sensor didn't detect any spiciness. Medium? Refreshing and easy to drink. Lightly stirred and lightly mixed, it has a gentle sweetness to it. By the way, I had it with cabbage and bacon pasta. It was my first time to pair sake and pasta, but the saltiness of the bacon and the refreshing acidity of the sake went surprisingly well together.

A bottle that has been sitting in the refrigerator of a liquor store I am familiar with and has always tempted me. Finally, I was able to purchase it. I was listening to the liquor store owner's advice, "Put a towel or something on it and open it slowly," as if to say, "Ah, yes, yes," but the moment I untied the plastic holding the crown, it flew open with a "pop" sound without even touching the crown, and I realized, "This is it! I was made to realize, "This is it! I could feel the power of the active yeast and my expectations for the beer grew. After some hesitation, I decided to pour it into a flute glass. It looked like champagne, but the moderate acidity and full, mellow flavor were definitely sake. But the aftertaste is refreshing. It is a strange taste. I have tasted many kinds of sparkling sake recently, but this one had a charm that none of them had. I was charmed by it after just one sip. I am looking forward to returning again this fall!

The pleasant acidity is impressive. The sake level is surprisingly high at +7, but it does not give the impression of being spicy, and the crisp, refreshing aftertaste is to my liking. I served it with albacore tempura. The creaminess of the milt was well complemented by the clean taste. It is a great sake for a nightcap.

It has a freshness that is typical of nama-shu, a strong drinkability that is typical of genshu, and a robust flavor that can only be achieved by unfiltered sake. We served it with rolled vegetables with meat. I was enraptured by the crispness that neutralized the fat of the pork, and the fullness that did not lose to it. I think it has been a while since I had a bottle of Honjozo. (Maybe I was just too drunk to remember...). When I buy sake for myself, I tend to choose Junmai for some reason. I still have a negative image of it when I read that it is al-sozome, but the slight bitterness that spreads suddenly gives it a taste that is indescribably delicious. It reminded me somewhat of a line from a comic strip that describes honjozo as "for the improvement of sake quality. I am not sure if this is due to the honjozo technique handed down by the "god of sake brewing," but it was delicious. It has been a long time since I read Natsuko's Sake.

When the bottle is opened, the gas escapes in a pusher. There is a pleasant gassy feeling in the mouth. It tastes like apples. The alcohol content is said to be 17%, but it is so easy to drink that you don't feel it. Incidentally, the entrée is a curing pot from MUJI, which I was curious about. The rich flavor and moderate acidity of Hagi no Tsuru was in harmony with the unique taste of the cure nabe with its 16 spices, but also had a strong presence.

The second most exquisite sake that I was treated to by a friend. Probably the most expensive sake in my history, which I would never pick up myself. I have never heard of centrifugal separation for sake! But I guess the time and effort that went into the process paid off, because the aroma was so delicious that it penetrated my nose.  Delicious! I can't describe it well, and even describing it makes me feel awkward. And the sharpness is unbelievable. I can drink as much as I want. I was immersed in a moment of bliss at the end of the year 2023. I am truly grateful to my friend for treating me to such a luxurious drink.

This is the first superb sake I was treated to by a friend. It has a very elegant and gorgeous aroma, a fresh and pleasant sweetness, and a clean aftertaste, but it is so full of flavor that you can't help but take sip after sip. No wonder my friend loves it so much.

It was introduced to us by a liquor store as "a sake to drink in the cold winter. Well, the crisp and quite spicy taste is impressive. Food pairings are kindly listed, and it seems that "motsu nabe, ahijo, and stir-fried greens" are recommended. This aftertaste must go well with oil.  I had it with stir-fried vegetables and pickles, but it seems to go well with a variety of dishes. It seemed to go well with a variety of dishes. I ended up drinking a lot.
