It was hot like summer in GW. We had summer earlier than usual. (But it's been stored in the fridge for a year...) Speaking of Tokigen, I remember the sake brewed by Mr. Touji Noriguchi, a famous toji (master brewer). I was still a young boy who didn't know what sake tasted like (and I still don't know what sake tastes like now), but the sake I bought with great enthusiasm was KISS of FIRE made by Touji Noguchi. It was easy to drink like water, but the fruity, full-bodied flavor was a huge shock to me. It is one of the sakes that I have a strong attachment to and that led me to my current love of sake. Now, let's talk about the current sake. Just like the cool label, it tastes fresh, lush, and clean. It is smooth and easy to drink. Yet, the robust flavor overflows with a sense of happiness. We had fresh sashimi with it 🐟. The fat was washed out, but it blended well with the deliciousness of the dish. I am grateful for the sake that reminded me of one of the origins of my own love for sake.

Metachie is now available at GW. According to the POP of the liquor store, it is sweet and has a sour taste. We wondered what kind of food to pair it with, but chose Japanese dishes with various flavors, such as Wakatake-ni stew, which is unique to this season, grilled horse mackerel, Kaga-age with spicy renkon, and simmered sweet kabocha pumpkin. The juiciness of the sake spread out in your mouth as soon as you put it in your mouth. It is sweet and mellow, just like fruit juice. But it is not only sweet, it is also delicious with a light refreshing acidity and a lingering slight bitterness in the aftertaste! I thought I might enjoy it more on its own than with food, but I needn't have worried about that. Delicious with both sweet and spicy dishes. It goes with pretty much anything, so the next day I decided to go all out and pour a glass of wine to go with the sour stewed tomatoes. Yes! I used to think that it was impossible to have a sweet drink with food, but... it is true that it is sweet, but the food goes well with it. Is this the charm of sake, or is it just my stupid tongue?

Hokkaido's gourmet foods such as lamb skewers, Hokke sashimi, pickled gyoja garlic in soy sauce, and grilled asparagus with butter were paired with sake from Hokkaido, such as Otokoyama and Kuniume, which were easy to drink and matched the food. I don't know the brand, so this is just a reminder. Next time, I would like to taste it thoroughly. By the way, the picture shows the attention to the glass, which was impressive. Rich sweet taste. I often see the expression "Pilkulu" in Sake no Wa, and I suddenly felt "Oh, this is it...". It's a completely different thing, but there is something about it that reminds me of something else. By the way, I chose zunda dango as one of the entrées. I thought it would be a good idea to have something sweet with something sweet, but the sourness of the dumpling made it difficult to judge whether it would go well with the sweet or not.... However, I enjoyed it with grilled horse mackerel and steamed onion with mirin (Japanese sweet cooking sake).

It is not as spicy as the sake level, has a good sharpness, and although it is a pure sake, the alcohol content is relatively light at 14 degrees, making it easy to pair with food. It is easy to pair with food, such as smoked mackerel and boiled garland chrysanthemum and eringi mushrooms, which are both very peculiar dishes. I tried heating it to lukewarm, but it seemed to accentuate the vague impression it gave, so I personally prefer it cold. After a few days in the refrigerator, the spiciness lessened and the acidity became more apparent. This is a good thing.

I was thinking of getting a reasonably priced brew, but then I found a bottle of Kangiku Meikozo Occasional॰* ⑅⃝︎◌︎*̣̥. I thought it would be a good idea to buy it once in a while to reward myself for working hard every day! I bought it. I was afraid to open the bottle with a towel because I skipped the lid when I was drinking Densho-Kiku. I was able to open the bottle without any problem while releasing the pressure. Yum! It is as if you have bitten into a thick fruit, and the overflowing sweetness spreads out. But it is not only sweet, it also has a refreshing sourness and a subtle bitterness that is exquisite. It made my everyday evening drink a very luxurious experience. By the way, I blew the lid off on the second day 🚀.

I was planning to buy a dry one, but the impact of -30% sake made me buy it. When I opened the lid, the yeast woke up at once. Bubbles were rising from the bottom of the bottle. When I put it in my mouth, I felt a pleasant bubbling sensation. There is no impression that the sake is as sweet as the sake level, and the aftertaste is rather refreshing. Is the high sake level partly due to the unrefined sake? I will learn more about this from now on. It is indeed sweet and sour, but it seems to go well with meals. Ponshukan is always a fun place to visit. A parade of "limited edition" and "ogara-mi nama sake" caught my attention. Without any prior knowledge, I decided on this one immediately. First, the supernatant. The lid was opened and I sipped it without paying attention to anything, and I was pleasantly surprised to feel a slight bubbling sensation. I was completely caught off guard, so I felt like I was waking up. Then, a gorgeous acidity. I took another sip after adding a drizzle of ori. The gorgeousness became even more lively, and I was enveloped in a sense of happiness. The bitter taste was pleasant to my taste buds and brain, which had already been paralyzed by the pleasant sensation. It soaked into my tired body after the weekend.

Since there have been a lot of sweet cold brews recently, I decided to change things up. The first day The first day I went to the supermarket and had a bottle of the "light" and "dry" style. The POP described it as light and dry, but I got the impression that it was full-bodied and deliciously spicy. However, it was not too strong and would go well with a variety of dishes. We actually enjoyed it with squid and taro stew (sweet and spicy), amazu ankake (sweet and sour), and yodarechicken (spicy). The second day We chilled it in the refrigerator. The full-bodied flavor became milder and the impression was more refreshing. It has a soft sweetness in it. Personally, I prefer it at room temperature. It washed out the fat of the silver cod in a good way.

The spoils of war in Akita. Sake brewed with rice, koji and grapes that I was curious about. Other brewed sake. When poured, it has a rosé-like color. The magnificent phrase, "Sake as sweet as nectar, dedicated to the dragon that eats in the haze," is aptly described. The toji's confidence and enthusiasm are evident in this sake. The fruity and refreshing sweetness makes it easy to drink. Since it was so much fun to drink, I compared it with Myonobu, which I had some left over. The sake level, acidity, and amino acidity are similar, but Senryu is fresher and Myonen is deeper. The Senryu is more budget-friendly, costing only 1,650 yen for a four-pack, so it is hard to decide which one to buy the next time these two bottles are on display.

At Akita Kurasu, a sake bar in the Akita Station Building. We were hoping to get a chance to try the Shinmasa, but unfortunately it was SOLD OUT. I changed my mind and ordered my first A-Sakura. Attracted by the words "recommended," I chose a lukewarm sake, which I usually don't drink! It's nice to be able to try something you wouldn't normally choose ✨. And what's more, it was a "men's day", which was a nice touch. The price is very reasonable even if you include the iburigakko (pickled ginger)! This is my first A-Sakura, and the moment I put it in my mouth, the spiciness spreads. I thought the sweetness would be enhanced by the warmed sake, but I was a bit surprised by the powerful spiciness. (Maybe my tongue was numb to it.) But it made me feel warm and fuzzy. But it made me feel warm and toasty, both physically and mentally.

This was my first Eiko-Fuji since I started working at Sake-no-Wawa. I was excited when I saw a bottle on display with a cute label that I had always seen here! The first glass I poured without thinking was a bit too big for my expectations, and I was left with a "hmmm" impression. However, the second cup, which I poured after mixing the corkage thoroughly, was something else. The luscious flavor with just the right amount of acidity was exquisite! No wonder it is so popular.
