いっかいやすみWe had it as a food wine. What kind of fruit is it?" What kind of fruit is it? Green apple? I think it was classified as "slightly dry," but my tongue sensor didn't detect any spiciness. Medium? Refreshing and easy to drink. Lightly stirred and lightly mixed, it has a gentle sweetness to it. By the way, I had it with cabbage and bacon pasta. It was my first time to pair sake and pasta, but the saltiness of the bacon and the refreshing acidity of the sake went surprisingly well together.

いっかいやすみA bottle that has been sitting in the refrigerator of a liquor store I am familiar with and has always tempted me. Finally, I was able to purchase it. I was listening to the liquor store owner's advice, "Put a towel or something on it and open it slowly," as if to say, "Ah, yes, yes," but the moment I untied the plastic holding the crown, it flew open with a "pop" sound without even touching the crown, and I realized, "This is it! I was made to realize, "This is it! I could feel the power of the active yeast and my expectations for the beer grew. After some hesitation, I decided to pour it into a flute glass. It looked like champagne, but the moderate acidity and full, mellow flavor were definitely sake. But the aftertaste is refreshing. It is a strange taste. I have tasted many kinds of sparkling sake recently, but this one had a charm that none of them had. I was charmed by it after just one sip. I am looking forward to returning again this fall!

いっかいやすみThe pleasant acidity is impressive. The sake level is surprisingly high at +7, but it does not give the impression of being spicy, and the crisp, refreshing aftertaste is to my liking. I served it with albacore tempura. The creaminess of the milt was well complemented by the clean taste. It is a great sake for a nightcap.

いっかいやすみIt has a freshness that is typical of nama-shu, a strong drinkability that is typical of genshu, and a robust flavor that can only be achieved by unfiltered sake. We served it with rolled vegetables with meat. I was enraptured by the crispness that neutralized the fat of the pork, and the fullness that did not lose to it. I think it has been a while since I had a bottle of Honjozo. (Maybe I was just too drunk to remember...). When I buy sake for myself, I tend to choose Junmai for some reason. I still have a negative image of it when I read that it is al-sozome, but the slight bitterness that spreads suddenly gives it a taste that is indescribably delicious. It reminded me somewhat of a line from a comic strip that describes honjozo as "for the improvement of sake quality. I am not sure if this is due to the honjozo technique handed down by the "god of sake brewing," but it was delicious. It has been a long time since I read Natsuko's Sake.

いっかいやすみWhen the bottle is opened, the gas escapes in a pusher. There is a pleasant gassy feeling in the mouth. It tastes like apples. The alcohol content is said to be 17%, but it is so easy to drink that you don't feel it. Incidentally, the entrée is a curing pot from MUJI, which I was curious about. The rich flavor and moderate acidity of Hagi no Tsuru was in harmony with the unique taste of the cure nabe with its 16 spices, but also had a strong presence.

いっかいやすみThe second most exquisite sake that I was treated to by a friend. Probably the most expensive sake in my history, which I would never pick up myself. I have never heard of centrifugal separation for sake! But I guess the time and effort that went into the process paid off, because the aroma was so delicious that it penetrated my nose.  Delicious! I can't describe it well, and even describing it makes me feel awkward. And the sharpness is unbelievable. I can drink as much as I want. I was immersed in a moment of bliss at the end of the year 2023. I am truly grateful to my friend for treating me to such a luxurious drink.

いっかいやすみThis is the first superb sake I was treated to by a friend. It has a very elegant and gorgeous aroma, a fresh and pleasant sweetness, and a clean aftertaste, but it is so full of flavor that you can't help but take sip after sip. No wonder my friend loves it so much.

いっかいやすみIt was introduced to us by a liquor store as "a sake to drink in the cold winter. Well, the crisp and quite spicy taste is impressive. Food pairings are kindly listed, and it seems that "motsu nabe, ahijo, and stir-fried greens" are recommended. This aftertaste must go well with oil.  I had it with stir-fried vegetables and pickles, but it seems to go well with a variety of dishes. It seemed to go well with a variety of dishes. I ended up drinking a lot.

いっかいやすみAt an eel restaurant Marriage of eel and sake (No.2). I am not sure which kind of Otters it is. I had an impression that Ottersai has a fruity ginjo aroma, but the one I had this time was impressive for its clean and crisp taste. The sweetness and fat of the eel sauce was washed away, while the light and delicious taste did not end there. I was immersed in a luxurious and happy feeling.

いっかいやすみAt an eel restaurant The marriage of eel and sake (Part 1) Before having them, I felt that it would be difficult to match them, but I enjoyed all the dishes I ordered without any worries. Among them, this is the most impressive one. The taste is fruity and reminds me of pear. I honestly wondered if fruity and eel go well together. However, the acidity was mild, refreshing the fat of the eel, while the umami was strong. We were able to enjoy the wonder of the pairing.

いっかいやすみI saw a bright blue bottle at a local supermarket. I was somewhat intrigued by the loose-looking label and the words "Craft Sake Sparkling," so I picked it up. When I opened the bottle, it was filled with bubbles. As the description says, you have to put the cork in the bottle once and pour it in upside down. It was fruity... pear-like, I guess. But then the spiciness comes in. It was very powerful, contrary to the loose label.

Fukuwagura純米吟醸生酒

いっかいやすみImuraya is well known for its meat buns and adzuki bean bars. I did not know that it is a Mie company. Fukuwagura is the first sake business by the group. Since it is a draft sake, I wanted to enjoy it while it was still cold, so I enjoyed a single-bottle bottle in the Shinkansen train. The aroma is gorgeous on the palate. As stated in the product introduction, it reminds me of muscat. The sake is refreshing and the sake cup goes down well. By the way, I served it with gizzards and onions in ponzu vinegar that I got at a convenience store. The acidity of the ponzu and the fresh onion flavor went perfectly with the sake!

いっかいやすみIt is said to be the food wine of the Iseshima Summit dinner party. Although it is labeled "dry," it has a mellow, fruity aroma rather than spiciness. The tangy spiciness that spreads afterward has a clean aftertaste. I enjoyed it with various dishes such as sashimi, simmered dishes, and fried dishes.

いっかいやすみThe bubbles and citrusy aroma are very gorgeous. Of course, it is served in a flute glass. The refreshing acidity without any unpleasant taste spreads on the palate. The pleasant stimulation and gentle sweetness will make you happy with just one sip. Of course, it cannot be finished with just one sip. This is dangerous... I would like to pair this with oden. The sweet and spicy taste goes well with sake. Is it the sake that goes well with everything, or is it my wife who prepared it for me?

Spark Riz Vin純米発泡

いっかいやすみI was curious about this drink when I saw it at a local supermarket. Riz Vin" means "rice wine" in French. With an alcohol content of 4.5 to 5.5%, it has a sweet but refreshing taste that even those who do not like Japanese sake can enjoy. The small volume makes it more of an aperitif. I enjoyed it with food. It is difficult to match sweet sake with dishes, so I tried it with three different flavors: something salty (pickles), something sweet and spicy (yakitori), and something sour (Japanese marinade). Since the sake was light, I was able to enjoy all of the dishes in their own way. If I had to pick the best...it would be the yakitori.
