Here is the first bottle of the second year of Sake-no-wa. In the first year, I tried to enjoy a variety of brands and never drank exactly the same brand. I think I have a vague idea of what suits me and what doesn't (I'm not so sure???). Based on this self-evaluation, the theme for the second year was "find your favorite bottle. I am sure that next year I will be able to say, "Wow, you like sake. Do you have a favorite brand? I am sure that next year I will be able to proudly answer the question, "I see you like Japanese sake. I am sure you will be able to proudly answer the question, "Yes, I do! So I picked up this one, a summer sake that gave me great memories in the spring. I was very impressed with how delicious it was with sashimi. It seems to be "the less famous one" in Japan, so I was excited when I was able to reopen the bottle. With high expectations, I will have it! Hmm? It's a little different from what I expected. It's kind of spicy. Of course it tastes good, but it doesn't have the freshness that was so impressive. It was made this year, but the sake stored in a liquor store gives a fresher impression... Sake is difficult to make!

The aroma is almost melon-like. It has a mild and mellow sweetness, although the sake level is ±0. It has a sweet sake-like flavor, but it does not get in the way with food. The fact that it is a bit pricey for everyday consumption allowed us to indulge in a bit of luxury. I realized that it has been exactly one year since I started eating saké no wa. I used to like sake, but I used to hold back because I was worried about my blood sugar level. It has been a year since I lifted my ban on sake, saying, "Enough is enough. I have been drinking sake in small quantities, but the days when I don't drink are few and far between. When I tested the effects of sake on my health with my own body, the results of my medical checkup were rather good. My blood sugar level was rather lowered. Check-in 61 is not much compared to the people who use this place, but the style of drinking a four-pack of sake at home seems to suit me. I can't deny that I have a spoiled tongue and my consumption has slowed down recently due to the summer heat and the feeling of oma again, but I would like to continue to enjoy it patiently ☺.

You can feel the sweetness of the rice with moderate weight. Above all, the reasonable price, which can be changed for Shibasaburo Kitasato, makes it a pleasant evening staple. The same sweet and delicious taste as last time. As the name "Karoyaka" suggests, it is easy to drink. It has an elegant flavor like that of white peaches that makes you feel enchanted. The acidity and the bitterness that comes later give it a sense of depth.

The one you can never go wrong with. The moment you put it in your mouth, you will be happy with its sweet and savory taste. It has a nice bitterness and a refreshing aftertaste, and it tastes great even in the summer. The bottle was empty in no time. I would love to try a comparison of the four Discovery Series wines someday...

This is probably my favorite bottle design since I started Sake-no-wa. The website says, "The finished bottle can be used as a jug for soothing water"...that might be a good idea. Now, let's take a look at the flavor. It has a refreshingly spicy, moderately sour and bitter taste. And the crisp aftertaste is good for this season. On the third day after opening the bottle, the acidity and bitterness became more pronounced. We enjoyed it with fried corn with aroma, feeling summer on a hot night with the air conditioner turned off.

It has a very fruity taste with a hint of melon and banana. Not only is it sweet, but it also has a delicious flavor and a good amount of bitterness that lingers afterwards! This is delicious... The Noto Toji is one of the four great toji (master brewers) of Japan. I had the impression that Noto sake has a rich and robust flavor and should be served with fresh seafood, but I was happy with just the sake. As a sake lover, I was concerned about what would happen to Noto's sake breweries after the earthquake. One of the breweries, Kazuma Shuzo, is a sake brewery that I have visited at their directly managed store. The harsh reality of not being able to brew the planned amount of sake due to the disaster prompted Akatake Brewery, a sake brewery that had suffered from the disaster, to seek out ways to help. We were also surprised to learn that one of the former brewers of Akabu Shuzo has married in Noto Town, Ishikawa Prefecture, and is now working at Kazuma Brewery. The situation continues to be difficult, with the population outflow accelerating in depopulated areas and the lack of progress in dismantling public funds. I decided to continue to actively pick up sake in the future in the hope that one of Noto's wonderful cultures will continue for a long time.

The hot days continue. Consumption of beer and highballs has recently been on the rise in place of sake. Both body and mind are craving for a refreshing drink. So I decided to try a different way to enjoy sake!  Please enjoy it with soda. The brewer of this sake, Tama Sakura Shuzo, has a very high Sake meter of +10.0 and an acidity of 3.5, and I remember that the mellow nigori sake with a Sake meter of -30 that I had in March was unexpectedly (excuse me?!) enjoyable. I had high expectations for this one as well. First of all, the taste is very strong. It had a refreshing citrus-like acidity, but not so much that it was "sour! I think it was not so much "sour" as "acidic". Then, the main attraction, the soda. The more soda I added, the more easily I could taste the refreshing sourness. The gentle flavor of the white malted rice combined with the shwashiness made it refreshing and enjoyable. It is also good for this severe heat. However, perhaps it is the effect of the white malted rice, but I can't deny that it somehow feels like a shochu highball. Considering the cost performance and availability, it is a difficult question which one to choose next.

It was found alongside Miyamanishiki at a liquor store. It has the same 55% rice polishing ratio. I chose this one brewed with local Ashigara sake rice. It has a moderate acidity and a moderate sweetness. It has a good sharpness and goes well with meals!

Due to the heat, sake has been a bit stagnant. I chose a light and refreshing summer sake. Personally, I thought it would taste like pineapple, but the internet seems to describe it more as "muscat". Difficult to say! Thinking back, I was not familiar with summer sake as I have never had the culture to enjoy sake in the summer. It is nice to have sake that matches the season, I thought to myself. By the way, I got the impression that the acidity and astringency were a little stronger on the third day after opening the bottle. It was delicious in its own way.

I was torn between the two, but I chose this one because I preferred its elegant and playful packaging. As the name suggests, it was crisp, refreshing, and easy to drink. The accompaniment was slightly seared dried firefly squid. The raw smell of the squid's body was washed away, and each flavor was in indescribable, exquisite harmony. However, this exquisiteness was felt only on the first day. The sake itself was delicious on the second day as well (in fact, the balance of sweetness was better on the second day), but I couldn't get enough of it.

Founded in 1876, it is a small sake brewery run by a family of three...I am attracted by the small but solid atmosphere that seems to continue to produce good sake. (Simple) It was easy to drink with a crisp and refreshing impression. It is good as a food sake. Two days after opening the bottle, the flavor and sweetness seemed to have increased. It was delicious.

A Junmai Daiginjo brewed with Yamadanishiki was followed by a Junmai Daiginjo that happened to be brewed with Yamada Nishiki. It has a soft and gentle ginjo aroma, good acidity and umami. It finishes clean and crisp. Very clean and elegant ✨. Nabeshima gives the impression of being glamorous, but this one has a very sophisticated image. The last Kido I drank was very glamorous and cosy! It was the perfect little treat to add a touch of glamour to everyday life. This is a sake that I would like to open on a special occasion and savor it carefully.

The sweetness and ginjo aroma that spreads in the mouth... I can only describe it in a monotonous way, but it is very juicy! And it's not only sweet, but the bitterness is addictive. Hmmm, stupid tongue. It has a nice sharpness and is easy to drink like water. According to the website, it is "a type of sake that has an even brighter rice-derived flavor when heated to human body temperature. I wanted to know more about that aspect of it, but one gou was too little to do so.

It was around the time I started working. I used to visit a small restaurant every time I had a chance to go to Kanazawa. I was addicted to enjoying sake while having delicious food there. It was the beginning of my growing interest in and love for sake. I remember drinking Tetorigawa, Kikuhime, Tengumai, etc., but the brand I remember drinking clearly was Yuho. I remember that we enjoyed the sake with crab, which was delicious. It had been a long time since I had had a bottle of Yuho, which had remained in my memory for a long time. I was reminded once again that this sake has a subtle, refreshing sweetness and aroma, with just the right amount of acidity and the unique flavor of sake. The concept of this sake is to be a "sake that goes well with food," and I was told that it is recommended to be paired with heavy dishes, so I paired it with a hearty, fatty beef. I paired it with beef that had a lot of fat on it. It washed out the fat without interfering with the deliciousness of the meat, and at the same time, it was hard to taste the subtle umami flavor. It can be used with a variety of dishes!
