If you use red yeast for nigori sake, you can make pink sake with low alcohol (11 degrees for Harukoi) ✨.
The only problem is that the yeast is easily weeded out by other yeasts, so it's hard to get the red color without someone who hasn't touched the yeast handling it😌.
It looks beautiful and tastes beautiful too☺️.
Mild acidity and a tart mouthfeel, with a sweet and sour taste reminiscent of strawberries as it says😌.
It's 11 degrees so you barely feel the alcohol and I think it should be positioned as a dessert 😊.
