Maybe it was because I drank it after a sweet and umami sake, but it was sweet and umami, but had a very clean and refreshing aftertaste.

Comparison of 2-year aged sake (left) and freshly squeezed raw sake (right). Both are the best tasting. It is not easy to drink, so we drank them slowly with a good taste.
We had it both warmed and chilled.
It was delicious heated and also very tasty cold, with a completely different texture on the tongue and a very full flavor!
