Today is ......‼️
It's our wedding anniversary, so I opened a bottle of my favorite Jikin Yumachi 🌾 Nama 😁 (but my wife doesn't drink it, so I'm always alone...)
When I open the bottle, I wonder...what is it...the rice is different but the aroma has a rich Ginjo aroma unique to Jikin ✨🤤.
I always find it really strange 🤔.
The first sip of this sake has an excellent balance of sweetness and umami, with a slight piquancy of the raw sake 🫧 and a smooth aftertaste that disappears without any peculiarities 😆 You can luxuriously taste the plump and delicious flavor of the omachi 🥰.
The aftertaste is not sticky and does not leave a sticky feeling on the tongue either 👍.
I was impressed by the taste of the raw Senbon-Nishiki I had before after the second day of drinking it... I'm hoping for that kind of change in this Yumachi 🤩.

The umami has increased considerably✨
But... the alcohol has also increased a bit😅.
I still think it's best to drink the sake within a month of production 😭
I feel like I'm missing out on the best time to drink it... 😭
But...! I'd like to stock up again 😋 lol
