Fresh sweet and spicy fancy guy 🍶. I came across a bottle of Imi Gin-Sen this season 😁. Gorgeous ginjo aroma on top of the aroma. This year's sweet and spicy is slightly sweet. Sweetness, high alcohol spiciness, umami sweetness and balancing bitterness. Fresh gas feeling is strong. Compared to last year, the sweetness is weaker and the bitterness is weaker to match, which is more to my liking than last year. 😋😋😋😋 Is this brewed to achieve this balance? This is Pitama, who was sold a 50,000 yen Jikin Tokkyo Omachi, but couldn't afford it. The box was elegant and cool. Now, here are my impressions of Yamasan Sanzan Ke Nishiki. It has a fresh gasiness. The aroma is fresh ginjo aroma. The nose has a hint of grape. The balance between acidity and bitterness is strong and the sweetness and spiciness are dry. Behind this is lemon squash 🍋🍶. This is sour, but just barely sour enough to be considered sake. The level of sourness is on the level of Senkyoku Black Label after the rebranding. The aroma is a refreshing ginjo aroma mixed with sourness. This is my first Azumami due to the influence of a highly rated review in Sakewa! (not the same specs though). It is full to the top of a great bottle of sake. That means a little more than a square 😊. Fresh ginjo aroma mixed with the aroma of matured summer grass. The taste is well balanced with matured umami, acidity and bitterness. There is a strong sense of gas. The combination of matured taste and gaseous taste can be found at 😋😋😋😋 The sweetness is slightly dry. Even after the gassiness is gone, it is still a beautiful sake, so it is a delicious food sake. I learned about another delicious sake. 3,200 yen without tax

New Sake of the Season 🍶(I was about to write this as I was drinking the first bottle when it was opened, and it's already the third day of the new season 💦) The aroma is gorgeous and has a very strong ginjo aroma 😆. Almost no gasiness. A gentle harmony of sweetness, umami, and acidity with a thin body. This is it, this is exactly the Junmai Daiginjo kind of delicious sake. 😋😋😋😋 The sweetness and spiciness is medium. It is 50 polished but it feels more highly refined. I wondered what kind of rice was used to make this sake. Later, I looked at a popup from Koyama Shoten and saw "Gohyakumangoku" and "Comet". I guess I started new sake from a little too high quality rice 😁. 3545 yen without tax

Snow Goddess Highly Refined Pure and Large. I got it unexpectedly! I found it in the store and my heart rate was racing until I finished paying the bill💓. It's a rare rare sake in Koyama Shoten. I had been thinking about when to check it in, but yesterday I watched the Emperor's Cup soccer final. Machida Zelvia, my hometown team, won their first major title 🏆. Today I opened the rest 🍶 from a small batch at noon. It still has a slight gassy feeling and is fresh and delicious! The aroma is a gorgeous, fruity ginjo aroma. The gasiness is firm. In the mouth, it has the round and gentle mouthfeel that only Junmai Daiginjo can produce, sweetness and umami, with moderate acidity and slight bitterness that gives it a juicy taste. On top of that, it is fresh and delicious with a sense of gas. 😋😋😋😋😋 The sweetness and spiciness are medium. Rounded happiness spreading in the mouth. Jyushidai is still great! 8,100 yen without tax

The recommendation on the back label said that cold sake is not good and cold sake and lukewarm to hot sake are recommended. However, I drank it chilled and warmed, and it was exactly as it should be 😋. Kuririn is a series brewed with district-designated Misato Nishiki from the town of Misato, Akita. The name "Kuririn" is written "Ritsurin". I am sure because I heard it at a sake brewery. The sake brewery reads it as Kuribayashi. Fresh ginjo aroma on the top of the nose. The balance of umami acidity and bitterness is voluminous. There is a slight gasiness, and the sweetness and dryness are slightly dry, crisp, and delicious. 😋😋😋😋 A beautiful sake good for a mealtime drink 🍶. Priced at 2,850 yen without tax. This afternoon I'm 🍶2 with a friend from college that I haven't seen in a super long time. Tokugawa is a 1.5 gou (1,380 yen) style restaurant. For this class of sake 👍. This was my first time to drink Hiwada. It is a delicious light cloudy sake with a ginjo aroma and sweet and spicy taste. 😋😋😋😋 Both Shinten and Abe are modern dry. They are light and were well received by my friends. After all, it is fun to talk with friends who know each other well. I wonder if they have a bottle of Abe for restaurants, please sell it to me too!

The label is the brewery I went to in the summer! When I was shown around the brewery for a bit, I remember they said they were not making sake at the moment and were letting it mature in tanks. It has a dry, umami acidity, sweetness and spiciness that is closer to the mid-palate than Jindai, and a harmonious mouthfeel with a sense of umami. 😋😋😋😋 It is an autumn sake! No gassiness. Yamagata Masamune Sake Mirai, the quintessential Yamagata Ginjo Sake👏👏👏. Refreshing and gorgeous ginjo aroma. The top nose has a grape nuance. There is a strong sense of gas. Fresh, with a balance of umami and acidity with a little bitterness. It is too easy to drink with a clear, fine-bodied, highly polished body! It has a medium sweetness and spiciness. If you drink it for the first time and are blindfolded and told it's a Jyushiro, you'll think it's a Jyushiro. I wonder if it's because Sake Mirai can produce a sense of high purity that you wouldn't think it was 50 polished rice. Oh, no! The one I bought in Aomori is now sold at Koyama Shoten! But it's so good and so cheap that I'm going to buy it again. I learned during my trip to Aomori this summer that Nishida Shuzo has a brand called Kikusen. It has a refreshing ginjo aroma on the nose. It is a very clear, light and dry sake with a sense of umami. Slightly gassy. Good cold sake. 😋😋😋😋 The sweetness is on the dry side. The quality of Nishida Sake Brewery is second to none!
