I discovered it at a local sake shop I happened to visit on vacation.
I was excited to see Houou Mita, which I had never seen in my hometown!
I bought a lot of bottles, but this is the one I really wanted.
I can't wait to open the bottle!
The aroma is muscat!
When you drink it, it is surprisingly light, dry, and crisp!
But after about 5 days, the dryness disappears and a fluffy, sweet, gorgeous feeling emerges.
It would be a waste if you finish it in 2 or 3 days.

It's a rare spec.
We heard that it is best to drink it one or two weeks after opening the bottle, but we tried to drink it right away.
Hmmm, it's completely different from any sake I've ever had!
For starters, this sourness is unique. It's not like lactic acid, and it's hard to describe. It's hard to describe. It's hard to describe. At this point, I can't say it's easy to drink.
Then leave it at room temperature for 7 days.
It has mellowed. The character is still there, but it's now fruity and sweet, making it easier to drink. The sweetness has a syrupy, caramel-like richness to it.

Hakurakusei is the ultimate food sake.
It has a very "calm" image for better or worse, but this one has a very refreshing yogurt-like acidity.
I enjoyed it on its own.
