I was off work today and went to the newly renovated Kogure Sake Shop, which I had been curious about for some time.
The store was clean and full of the sake I had been looking for.
This time, I chose one of them and had a bottle of Kabutomushi.
The aroma was slightly fruity, and it had the sweetness, acidity, and umami that are typical of Senkou.
The sourness remains at the end, and then it breaks off.
The acidity remains at the end, and it cuts through the smell of the bonito tataki.
It is a delicious drink.
