Omachi rice + Hakuto yeast used Junmai sake produced by the TAKEO 20 Project, a collaboration of agriculture, commerce, industry, and university students, using specially cultivated Omachi rice from Tatebe-cho, Kita-ku, Okayama City. The label looks modern! This one is definitely fruity 😆. Fruity sweet and sour Light and easy to drink Hiruzen style yakisoba noodles and umaumaumauma 🐎. I bought a lot of kamaboko at Sakaiminato because they are easy to carry and store 🐟. The crab has a very interesting shape and I can't stop smiling just looking at it 🦀 🦀 🦀 🦀. I found out about it thanks to the Kenmin Show program 😁.

This is my first bottle of "Ishichi" Asahi rice, one of the brands that got me into the sake swamp. It has a nutty, savory, full-bodied flavor with a strong impression of rice sweetness rather than a fruity sweetness 🤤. I knew it! Great cosmetics too 😆.

It's my first time to try a special junmai 😳. It has a mild aroma, but when you drink it, you can feel the sweetness and the umami. It's a great sake with a great price 😆.

Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑. After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!

It was very carbonated and I spilled a lot of water 😛 It was so fizzy it was like pouring cider into a glass. It's not too sweet and the grains of rice are delicious. It's also good on a hot day as it's chilled 😀.

Looks so cool!!! 🤣LOL Not the usual goddess of ministry️. I wonder who she is: ???? LOL! Compared to the standard Hanagumori Clean and refreshing👍. It's a doburoku but it's like eating a fruit. Rice dessert feeling😋. It also refreshes greasy food. The chocolate was delicious too 😚😚

I carefully opened the bottle and it took about 15 minutes. It's a sake that you can eat with your eyes, with the grains of rice usually recognizable. Overall, the strong gaseous feeling gives a swooshing impression, so it's refreshing to drink. I liked it.

Purchased during a visit to a brewery in Saijo, Hiroshima. When the bottle was opened, it smelled a little like magic ink. It tastes sweet like white sugar and has a relaxing flavor. When I went back to my parents' house, I didn't have any sake in stock, so I bought this bottle at a nearby supermarket. It was sold for about 1,000 yen in an ordinary supermarket that rarely stocks sake, so I honestly thought it would be good if I could drink it, but it turned out to be a very tasty sake that greatly exceeded my expectations 😆. It has an elegant sweetness and a light mouthfeel that breaks up nicely without any miscellaneous flavours, making it a good all-round sake that can be drunk alone or with food👍. The sake has been awarded the Gold Medal in the Wine Glass Sake Award 2020😄. It's a great sake to drink alone or with food.

Chiyoroku given to me by a friend. It's my first time 🙌 It's a junmai daiginjo, but it's so refreshing and easy to drink 😆. It has a moderate sweetness and a slight bitterness with a nice sharpness. The alcohol content is 16%, but you don't feel it at all😅. It was a very light summer sake 😆.

Besides "𛀣久盛", "瀧澤" and "鼎" which I drank the other day are also brewed at this brewery. ✨️ [Glass.] Aroma of mellow apples with honey, a refreshing sweetness on the back side of a thick umami flavor, and a mineral aftertaste that lingers on the palate. [Mokkiri.] A fruity aroma with a strong umami, soft umami, and a lingering aftertaste that is fresh and slightly sweet from the sharpness of the acidity. I wanted to eat meat, so I had roast beef from the basement and the usual fish shop's horse mackerel. After the night shift, I continued to work almost 24 hours a day, and the next day I worked long hours from 6:30 a.m. to 9:00 p.m. Moreover, I sweated a lot from carrying in, preparing, and taking down, and my body was craving salt. Kikumori Shinshu Secret Sake Hanpukai 2025 Gold Course. From the July Shinshu Secret Sake Hanpukai comes Kikumori from Shinshu Meizo. Shinshu Meizou, which has a brewery in the Ueda area, exhibits a freshly stored sake that has been aged in a thermal tank for two years at ice temperature. It is a 100% Miyamanishiki Junmai Daiginjo, with a Sake degree of -2 degrees, an acidity of 1.6, and an alcohol content of 16 degrees, making it a dark, mellow, sweet sake. It has an aroma of muscat and apple on the nose and a mellow sweetness on the palate. The extremely mellow and soft mouthfeel, which has lost its angularity due to aging, even gives the impression of lusciousness. The rich umami flavor spreads out firmly, and it finishes smoothly with a beautiful acidity. It is a rare opportunity to enjoy an aged sake that has been stored in its raw state, and the flavor is perfectly balanced and delicious!

I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍
