Yesterday we went to Bicchu Matsuyama and Kibi Tsu!
We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨.
Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑.
After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶.
When you open the bottle, you will find a deep aroma of nuts and chestnuts.

It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor.
It has a presence like nuts and bitter chocolate.

Bizen tasted a sake from Ichinomiya.
Kibi no Ginpu" was too light for my personal taste, but this bottle had a very good impression, with a perfect harmony of freshness and smooth umami.
It was a truly delicious sake.
Taste of the Ancient Times
Aroma reminiscent of old wood and steamed rice. The sharp mouthfeel is followed by a tangy, pungent taste. The taste is full of alcohol with a hint of umami, and finishes with a lingering pungent and astringent aftertaste.
It gives the impression of good old tradition. It tastes like an old house. We would like to support this brewery as it is the nearest brewery to Okayama.

Bizen tasted Ichinomiya sake.
The labeling was a bit dubious, with no indication of rice polishing ratio or alcohol content, and "Junmai Daiginjo" pasted on the label after the fact...

It was spring, but I went to Itano Brewery's brewery open house in the fall.
It was a very nice and cozy brewery with a nice atmosphere.
We tasted many different kinds of sake, but the highlight was the sake tasting contest (❗️).
Naturally, it was free, so we took part.
The rules were simple: you had to compare the sake in the numbered rows with the sake in the "Iroha" rows.
You can challenge yourself by drinking several times, so the more you drink, the less you know 🤣.
I would never spit it out in my mouth because it would be a waste👍.
So, I finished enjoying the kurabiraki, and when I was at home later that day, I got a delivery, and when I opened it up, I was surprised to find a winner 😳!
I was lucky 🎊 even if it was just a fluke.
The taste of the Daiginjo was, needless to say, delicious, aromatic, light on the palate and easy to drink.
Daiginjos are more expensive than jun-daijos because they require more time and effort, but we were lucky to be able to drink it.
If you can make it, I highly recommend it. ❗️
By the way, there is also an all-you-can-pack sakekasu (sake lees) event. It's a great way to get a taste of sake 😁.

The amazake here is delicious 😊I buy it in bulk and this time I got free shipping so I also bought this sake 🍶 It seems to be a blend of junmai ginjyo and honjozo sake.
I immediately opened the bottle. The color is yellowish. The nose has a lactic acid aroma with a hint of alcohol. In the mouth, it has a mild taste and is more refreshingly dry than expected due to the acidity. There is also a sensation of alcohol escaping through the nose.
I paired it with grilled kosho-dai (pepper snapper). It tastes exactly like something between sea bream and chicken grunt. It goes well with the umami of this fish. ❣️The acidity of sake softens and the umami of rice increases. Sake goes well with it. ❗️
The rice used to make this sake is Asahi rice.

The Bizen sake was from Ichinomiya.
It was a dry sake from Okayama, but it was unfiltered, unpasteurized, and very drinkable.
It was a very tasty sake, authentic and worth drinking.
Participated in the "Chidoriashi" event for Okayama local sake. This event allows visitors to enjoy snacks from restaurants around Okayama Station and Okayama local sake at each restaurant.
The sake we were served was easy to drink with a refreshing taste. The sake is clean and fresh. It is not a lumpy sake.
I received this kind of sake from a resident of Wake-gun, Okayama Prefecture, who told me that it was sold at a hot spring in Wake. I don't know about nationwide, but people buy this sake with the name of Kiyomaro Wake, famous in Okayama, on the label, as a souvenir from the hot spring ♨️.
It was made by Itano Sake Brewery, known for its Ginpu.
