This is my first time drinking Hanaheizakura from Ehime Kondo Shuzo (^^)
There are three Kondo Shuzo breweries in Japan: Niigata, Gunma, and Ehime. (The capital of each is completely different).
Niigata Kondo Sake Brewery's main sake is Suganadake ⛰️
Gunma Kondo Sake Brewery's main sake is Akagisan🗻.

Kondo Shuzo is a brewery in Niihama City, Ehime Prefecture.
The rice is polished to 60% Matsuyama Mitsui produced in Ehime Prefecture.

The aroma is citrusy.
The moment you drink it, the umami spreads and the dryness comes immediately.
The dryness is strong, but the umami makes it easy to drink.
This umami flavor seems to go well with grilled fish.
It has a nice lingering aftertaste, so it can be drunk while eating.
The rich umami and bitterness give it a heavy flavor, but it has a good sharpness and is not heavy. A highly satisfying sake that makes you want to savor it carefully.

There were two types of sake on tap, but I chose this Yamahai, which was brewed by a toji who used to work at Mori no Midori.
When served cold, it has a complex lingering aftertaste with a slight astringency after the acidity and deliciousness has passed through.
It is quite a tasty and rewarding sake.
When warmed, the astringency disappears and the impression becomes more rounded and gentle.
Both expressions can be enjoyed, so I enjoyed it alternately cold and lukewarm, or sometimes together, depending on my mood.
