This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!

The 2nd glass Wadarai Dry Junmai This is also a brand I've never had before! Although it is dry, it is surprisingly fruity! It has a clean and crisp taste, so it went in easily.

I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

I think they had closed their brewery for some reasons and were shipping out their stock, but I saw on SNS that they have started brewing again. I see that they have also released a draft sake. I drank a bottle of nama sake about 4 years ago when the warehouse was already closed, so it was a slightly matured one. Polishing ratio 55%, domestic rice, 15 degrees, Sake degree +2, Acidity 1.6, 1401 yeast? 1747 yen I thought it would be matured, so I was disappointed with its clean taste and no sense of maturity😅. I wonder if there are any liquor stores far from Takatsuki station or south of Kyoto station 🤔.

This one, like the Ko-Imari, was purchased when I was with Yoohee-san. The rice is Matsuyama Mitsui. It has a melon-like taste and a strong bitter taste like bitter melon. I thought it would be a little sweeter, but it is quite spicy. It is more like melon or cemedine. It is not my favorite type of rice.
