OSAKA SAKE & FOOD EXPO 2024⑱. The last of the Yomiuri Shimbun booth is here. There are stores where you can buy Nihonshin, and I've had it, but I've never seen such an expensive sake... Yamada-Nishiki 40% polished rice More modern label than the Nihonshin I drank at home 😁. It's gorgeous, but I felt it's more sake-like... The label is also modern and written in English, so I wonder if it's for export?

This one, like the Ko-Imari, was purchased when I was with Yoohee-san. The rice is Matsuyama Mitsui. It has a melon-like taste and a strong bitter taste like bitter melon. Bought directly from the Mukho Sake Brewery... Aroma: Slightly cemedine? As the label on the back says, it's a solid and heavy sake. It is like a local sake, and the bitterness in the aftertaste is a bit of a problem, but...it soaks into your guts...it goes well with strong flavored snacks...smoked hoya and stewed tuna...I enjoy it with a little bit of it....

This is also a gift from my youngest son... a local Chichibu sake from my hometown of Chichibu, Saitama. I know you may not like it, but...it goes well with Chichibu's hormone...and today's snack was...freshly kama-age shirasu (dried young sardines) from Miura, Kanagawa Prefecture.

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

I was curious why it says sweet on purpose😅. It's not like the popular fluffy fluty It's a solid sweet sake 👘. So, you know... It was great with light red bean paste sweets, cheese, teriyaki, etc 🎵. Recommended to drink at room temperature or lukewarm, but it was also possible to drink it a little chilled 👍✨.

5/10 Canned sake from Shotoku Shuzo. Kyoto has an image of an increasing number of these. Kyo-no-kiraki is Kyoto's original sake brewing rice and is used only in Kyoto. The taste is quite dry. The aroma is also subdued, which is probably due to the fact that it is hard to sense in the can. It has a sharp taste, so it is a good sake to accompany sake snacks.

At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. It is refreshing and light to drink. Pleasant acidity and a clean aftertaste, but it was a bit unusual.

Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵‍💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. Maybe I'll give it a try after tomorrow. It's good to enjoy long-aged sake sometimes. ☺️

The aroma is gorgeous and pear-like 😊The rounded mouthfeel, overall mild acidity and umami 😄Great crispness that disappears quickly 😘I felt it was an easy sake to pair with a meal 🥳. The last picture is of the Japanese garden next to Himeji Castle. It was very beautiful and relaxing 🥰.
