(*^▽^*)🍶🍶🍶🍶 I stopped by a liquor store on my way home from exploring Fukui Station the other day and bought this Echizen Cape ✨😀 I haven't seen it in about 4 years 🐧. The aroma is a bit of a gorgeous ginjo aroma😊The mouthfeel is smooth and the sweetness and umami of the rice is elegant in the mouth 😘The aftertaste is short and disappears quickly 😚👍. It is a well-balanced and delicious sake 🥳👍

🙂 Next was Aozora. I thought it would be sweet because it was nigori, but it was dry. You would think it would be sweet because of the pink label. It was refreshing and easy to drink.

Not much aroma. Slightly yellowish. The sake is junmai sake, so you would expect it to be robust, but it has a light mouthfeel. The light sweetness and acidity are pleasant. It is only 500 ml, so it ran out quickly. I wonder if I should throw it away or reuse it after drinking out of the Italian bottle every time. I'm a poor person, aren't I?

￣∇￣* Isuzu🍶🍶🍶🍶 This is a sake from our neighboring prefecture of Toyama✨. The aroma is quite mild, but when you put it in your mouth, the acidity comes from the soft rice flavor, and then it quickly kicks in, like a well-balanced and delicious sake😊.

The aroma is subdued. ❗️ The taste is very umami 👍. The aftertaste is clean and you won't get tired of drinking it. It's a sake that you can keep drinking 😅. It's not a modern taste, but it's a perfect food sake type 😅❗️ I paired it with my favorite mackerel sushi from Kyoto. It went great with my favorite mackerel sushi from Kyoto 👍. No wonder it is popular in restaurants in Tokyo these days. ❗️

A friend of mine said that if he had come all the way to Toyama, he would have had a variety of both Katsikoma and Haneya, but Hayashi had never had them. We compared two types of sake rice, Gohyakumangoku and Dewanosato. Both were to his liking, but the Dewa-no-sato was more acidic and better. I recommended it to him and told him that Koyama Shoten also sold it 😄.

Smells like yogurt, and when the temperature rises, it smells like cotton candy. The rice-flavored liquid is slightly carbonated, and while you think it is light to drink, it changes and becomes heavy with rice flavor, astringency, a sourness and bitterness that comes in a rush, then changes to sweetness and a lactic acidity that is tingling and refreshing. The changes are interesting. The aroma is mild and not so much 🤔, probably due to the fact that the bottle was chilled to the perfect temperature before opening. It has a strong umami 👍and a fresh aroma that may be derived from the Yamahai method 😊It has a nice sharpness to it 😚. Summer sake🌻⛅️ is over and it's time for cold sake🍁🍄🌰 which is now in full flavor🥰I'm looking forward to the future sake🥳.

Tonight, we will finally enjoy a very tasty "Shiuchu" and another brand "Hiroki" spring sake from the same brewery 🤗. This is the first time I've heard of a brewing method called "sanki amazakamoto". It is said to be a technique to bring out the flavor of the rice. The aroma and taste are gentle and slightly lactic, but there is none of the wildness of the traditional sake, and the sweetness and umami of the rice spreads throughout the mouth, making it easy to drink and delicious 😋😋😋😋😋.
