I saw it on a liquor store's installment and was completely unfamiliar with the brand, so I searched for it on Sake no Wa and found that Greissinger19 was drinking it, so I bought it. Strong gasiness. Dry, clean and sweet. Cider-like with peach and lychee flavors. Lightly sweet as written. The acidity is beautiful and the bitterness at the end is pleasant. A better sake than expected.

@sakebar Fukuzo Osato Sake Brewery is located in Kama City, Fukuoka Prefecture. I didn't know about this place until I came to Fukuzo. I checked and there is a Kanbokuto Brewery nearby ✨. The first aroma is faintly sweet. In the mouth, there is a refreshing acidity and juicy sweetness typical of white malted rice. It is followed by a slight astringency that finishes it off. The refreshing acidity is quite delicious.

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.

Nagurayama Shuzo's Aizu Shikon is brewed in Aizu Wakamatsu City. Although there is a tangy alcoholic stimulation when the sake is first served cold, it has a good balance of sweet, spicy, and bitter tastes, and as the temperature rises, the sweet and umami tastes come out later on. This is a refreshing, yet rich and powerful sake! This is a new brand that was just born 2 years ago, so we will continue to follow it 😋.

I had always wanted to come to this restaurant, Jyu. It was a nice place. The sake I chose was Dokure, which is labeled as an amazing sake from Kure. At first sip, I felt a slight sourness, but when paired with food, it was very good. As one would expect from a master brewer, he made the sake he wanted to make himself.
