Next, here is a bottle from ‼️ that was Miyajima's recommendation for the Shinshu Jizake Hanpukai. ‼️ To be honest, I can't really tell the difference 😅 although the richness of the orikagarami is better. I just keep reaching for the ogara-mi 😆. Maybe it's the bitterness that makes it better for eating 😋. Either way it's delicious, so this comparison is a lot of fun ‼️4

I was drawn to the limited edition label because it seems that from this year they have changed from Daiginjo to Junmai Daiginjo 😁. I found my favorite Satochi at an Izakaya and couldn't resist ordering it😍. The smell of pears. It smells so good. It has a caramel-like sweetness and then a light sourness. After that, the bitterness comes through quickly. It's a beautiful sake. It's really delicious. It's been a long time since I've had it😊. The taste itself is refreshing, but even with a strong oily taste like mackerel, there is a flavor that somehow does not lose at all ️.

Hana of Tsukiyoshino Unfiltered Nama Sake 720ml 100% Hitogochiki produced in Nagano Prefecture Rice polishing ratio: 55 Alcohol content: 15%. Purchased at Hara's in Ueda on Saturday. With amazake, of course. It is a gorgeous spring-like sake with a more mellow sweet taste. On Saturday, we went from Tateshina to the Ueda Castle beyond the ski resort. It was already starting to change colors. The parking lot was full. We had lunch at a buckwheat noodle restaurant in Sakaki Town on the way to Chikuma. We never had a bad experience at any soba restaurant.

New brand Jyuseki🪨. Sake rice "Celebration" is also a first🌾. First day. Good balance of sweetness, umami and acidity✨ Second day. Umami is rich and ⤴️ quite thick. It was also delicious heated. I'm not sure if this is a Gekkeikan group company or not. It's an authentic Kyoto-style sake.

Soba Kaiseki at Tachiaigawa Yoshidaya. We opened a bottle of Shinmasa and wanted to drink some more, so we chose a sake from Kyoto with which we have little connection. It is a sake called "Jyuseki. It has a very elegant taste, which is a testament to the rice and water used in Kyoto. It has a soft texture, with a slight sweetness and umami spreading in the mouth, and even though I was drunk on the Shinmasa, the taste remained on my tongue. We paired it with soba noodles, which matched beautifully and complemented the new soba. It was very delicious! (^^)/
