Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.

This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. It has a strong rice sweetness, and this one is also sweet like Wasanbon, leaving a bit of a lingering taste on the tongue. Upon closer inspection, it was a Tochigi sake 👀.
