Tasted chilled. Very mild flavor up front with a smooth and clean texture. Finish is mild as well and heats up pepper at the end. An excellent table sake for sure.
Tasted chilled. Thin texture at first with strong watermelon and cantelope flavor that moves into brown sugar and a bit of cotton candy. Finish is full and sweet. I think it will relax and expand a bit with time open.
Tasted chilled. Full bodied and flavorful on the front. Big umami, mushroom, forest floor flavors. Full finish that holds for a long while with spice and red pepper. Can't wait to have with food.
"Bambi Cup"
Tasted chilled. Very light bodied and smooth. Lychee, melon, apple, and bright citrus notes moves into deeper umami and roasted hazelnut. Acidity and alcohol on the edge of the palate. A nice drink and very smooth.
"Sanomaru Cup"
Thin and clean texture. Flavor is forward and crisp, with notes of raspberry, cucumber, bubblegum, and almond paste. Finish is fast and clean.
Had once before but didn't take notes on first open. Tasted slightly chilled. Lots of mushroom and umami flavor right up front. Smooth and thick texture, with a mellow peppery finish. Undertones of eclair all the way through. Very drinkable.
"Shimizu-No-Mai"
Full flavor up front of melon and black pepper and coconut. Texture is smooth and full bodied. Very well rounded and not too sweet. An excellent drink by itself but full enough to have with food.
Flavor is pretty mild up front but comes on stronger. The bottle says aloe and I wouldn't have thought of it but I see it now. Finish is tart and warm, with cherry and plum. A relatively full bodied drink, I wonder if it would do well by airing for a while. Also may be better colder.
All in all a nice drink and one I'd have with food.
"Kijuro" Tokubetsu Honjozo
Tasted chilled. Nose is full, green apple and melon. Flavor is up front, green apple and plum, with a woodsy straw finish. Finish tapers into alcohol and light plum.
All together a good drink and one that would be pretty versatile.
"Genbei San no oni koroshi"
Tasted chilled. Mild flavor and light texture. A bit of mushroom and forest floor, umami, dark plum. Soft finish. Really a mild drink with a deep quality that I kind of enjoy.
Softer the second day, but a big flavorful drink with a bit too much cotton candy sweetness for me. Has an intense bitterness on the finish as well. Not my favorite.

Flavor is very bold, with rose, cherry, cantaloupe, and some spice. Texture is smooth and thin a first with a long flavorful finish where some alcohol and spice settle.
A great value purchase and a fine table bottle. Would pair well with a wide variety of foods.

A wonderful drink by itself but I worry it will be overpowered by food other than nigiri or other similar items.

A very nice drink by itself that would be perfect with nigiri or sashimi. Could be overwhelmed by meats and heavier, creamy foods.
Nose is soft and full of melon. Flavor is full, bitter melon and cantelope at first, black pepper but not spicy. Texture is full and smooth with a long finish of maybe roasted red pepper. Very easy to drink.
"Sho-Une", opened slightly chilled.
Nose: medium to light, sweet melon.
Flavor: light at first and comes on strong. Big umami, mushroom, and green apple.
Texture: thin and smooth.
Finish: spicy and long, with strong alcohol lingering.
I think more of a food pairing as it is not as light and crisp as I'd like for a sipping drink.
Opened slightly chilled. Nose is full, with melon, apple, and a bit of stone fruit. Flavor is full bodied with more intense cantaloupe and spice, black pepper and alcohol. Texture is rich and smooth, and cloys a bit. Finish is clean but carries the spice and burn for a while. I'd drink it again but will have it with food. It's a strong and full drink on it's own.
"Ginjoshu" junmai ginjo
Tasted chilled, freshly opened. Wonderful mouthfeel, silky smooth and clean, no real acidity or burn. Nose is mild but melon, some mushroom and berry present. Flavor is very melon dominant, with lychee and straw. Finish is very smooth and long. Melon carries until the end with a hint of spice.
An excellent drink.
