Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. I've known the name for a while, but this is my first time drinking it. The rice is 100% Shukumei. It's fruity at first, but at the end, it hits you hard. It was easier to drink Gohyakumangoku, a special junmai, but I thought it had a common taste and passed it up. This one has more character. It is fruity and dry.

First Fushimi sake after debuting at Sake-no-wa! It's been a while since we went to Kyoto, so we decided to buy a bottle of Fushimi sake. The first time I took it out of the refrigerator, I had the impression that it was too alcoholic to be good for me๐. However, as the temperature gets closer to room temperature, the sweetness increases and it's nice ๐ณ It's mellow and easy to drink like Fushimi sake. It's delicious! This is a sake that should not be chilled, but lukewarm heating might be good too๐ค. I'm so glad I bought it in the end โบ๏ธ.
