Purchased at a local liquor store...Yamada Nishiki, ✖️ Gohyakumangoku = Koshitanrei, 100% sake rice from Niigata Prefecture. Sweet! It's more of a drink to enjoy on its own than a midday drink... it's a beginner's drink... women will love it... and since it's unfiltered, it's unfiltered, you can drink it on the rocks with ice... yup!

Tonight, I'm going to open this bottle for the first time in a long time & the long layover series. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. It gently wraps the sourness of the ume crystal and washes it away, and it goes surprisingly well with it, making it a good drink. ☺️

Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Nara's summer sake❣️ This is a summer version of Hyakurakumon, a famous sake of Gosho along with Kaze no Mori and Shinomine, made with rice outside the standard range and labeled on the back 😋. It looks cool and smells like melon 🍈. Refreshing, mellow, mildly dry ❣️. It has a nice sharpness and is easy to drink 😋😋. It's a jungin spec, but at 1,300 yen for a four-pack, it's easy on the wallet 😁Gozaimasu 😁Gozaimasu 😁Gozaimasu 🙏.

I have always been curious about this sake. First, let's take a sip. Smells more like candy than fruit. Banana cake, lychee, yogurt, freshly baked pound cake, very ripe peaches. No sign of activity. Concentrated! Concentrated syrup. Tart on the tongue with a good sweetness, ripe fruit like pears, green apples, and some alcohol as when the fruit is quite ripe. Finishes with bitterness, acidity and sweetness and has a long finish. Good and amazing. Power. It's drinkable with a splash. Shake a few times to mix and drink. Rice, milky smell. The rice flavor, sweetness, and sourness of the rice spread out in a flash, and the doburoku, or doburoku, has a fruitiness that surrounds the main rice flavor, and the bitterness comes in and gives it a nice sharpness. The rice is almost completely melted, so it is smooth and refreshing. Delicious! A few days later, after shaking and mixing, it did not separate even after a few hours. The alcohol feeling gradually faded away, and when I drank it, I could feel the strong rice flavor spreading out, sweet and mellow, like a dessert. A delicious drink.

Doburoku is generally considered to be a rather difficult liquor to drink because of its strong acidity and various other strong habits. But what is this doburoku! It's not so sweet or sour, just enough to give a gentle taste of the ingredients, and it's easy to drink! For those who like that habit, it may be quite insufficient. However, I like it this much better now. Other doburoku seems to take a little more getting used to. The rice mash is not that strong and has a mouthfeel similar to muddy sake. If I am wrong, it may even be easier to drink than the more habitual muddy sake... lol. Combined with the PET bottle container, it felt like Koiwai apple juice. Are my nose and tongue going crazy? I can feel the apple feeling somewhere. The packaging is probably a parody of the classic movie Leon. I found a funny one on Twitter, so I'll post it here.

[What a firm Machida 😆]. Machida Brewery's customary specs undisclosed items. The pear 🍐-like aroma, slight fizziness, sweet and fruity attack, and pleasant bitterness in the aftertaste, the Machida Brewery's characteristics are still intact. It has a gorgeous taste, and I don't have the palate to comment on the differences from the Machida Brewery in my memory😅. I got a bottle of Senkyu's "Kirifuri" on a business trip to Utsunomiya the other day...fruity aroma, strong acidity and bitterness? It has a fruity aroma, acidity, and a strong bitterness. I think it's a good sake for a meal...I had sardine nigiri and on the second day, I had yakitori as a side dish...I feel this sake is better when the bottle is opened. It has some peculiarities...but...it's delicious!

This is a piece of bread I bought on my way back from a trip to Kirifuri Kogen. I thought it was the perfect name for a souvenir, but I was surprised to find it was made by Senkou 😳. I've been storing it at room temperature for a while now because it's been heat-treated. But I thought it would be better to drink it cold, so I put it in the fridge and drank it. The best thing about this product is that it has the gas and acidity that I like, even if it has been heated.

I bought it for a souvenir, but a customer traveling from Hokkaido🐴 gave me some chocolates and I didn't have any on hand, so I had to rush to the store and drink it with everyone, including my sister🥂. Morioka! I chose the sake to go with the stylish snacks. This is also my first time. Nice choice by me. It is nice and clear and dry. Iwate's dry sake has no grandfather. The dialect in the store is nice. It makes the sake go down a treat!
