My father bought it for me as a souvenir from his trip to Aomori. The nose has a faintly acidic aroma. In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

Shizuoka Sake Tour. Gotemba's Kinmei Ryotama Junmai Ginjo, alc.16%. When served in the refrigerator, it has a subtle cider-like aroma. The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat. There is no significant change even when the temperature is set to room temperature. Should we wait a few days? Two days later, the alcoholic stimulation has disappeared, and the umami of the rice has become noticeably mellower. The aroma is still cider-like, so the overall impression is that it is a cross between sake and mead. This is good.

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.

I purchased this sake at the Goryonokura store in Hakodate, which I visited last week on a trip to Hokkaido. This sake is from Goryonokura, a sake brewery in Hakodate of the Kamikawa Taisetsu Brewery. I drank it in a sake cup that I bought as a souvenir at Kitaichi Glass in Otaru. The sake tasted delicious and was easy to drink. 1980 yen

The 22nd Hankyu Brewery Festival (1-2) Seisen] and [Takeoka] booths. Takeoka Special Junmai So no Mai Sold out and only available for tasting. Very fruity, sweet and juicy. The rich umami is good. The price is too good to be true, so it is understandable that it is sold out. Takeoka Junmai Ginjo Gohyakumangoku This one was tasted at room temperature, not chilled. I've heard that if you chill it too much, it becomes too crisp and blurred in flavor. The acidity is refreshing and not too dry. Takeoka Junmai Ginjo Yamadanishiki The nose is sweet from the first whiff. I prefer Sou-no-Mai or Omachi, which are more sweet and tasty. Takeoka Junmai Daiginjo Omachi Fruity, rich, sweet and delicious. I like this one, but it's not my favorite type. This is my favorite type, but it is a bit on the pricey side. I hear there are no places to buy it in the Kansai region. It is only available at product exhibitions, product centers, and antenna stores.
