Hinode Tsuru Junmai Ginjyo Miyamanishiki 60% 15% 720ml 1980yen We also bought a bottle of Honjozo at the brewery, but it was a completely different impression. The Honjozo was a little peculiar. This one is bitter with concentrated flavor and acidity. It is not at all dull. It is not flashy, but rather calm and delicate. The sweetness is graceful and has the taste of a first-class sake. The rice is local Miyamanishiki from Hitachiota. I found out that the heir who returned to his hometown had designed, brewed, and engineered the sake in a new attempt. The purpose of my visit to Kawanishi Sake Sales was this. Although it is not written on the label, the sake was labeled as unfiltered raw sake at the store. Unlike the label, it is fruity and modern. Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. If the name of the sake rang a bell, you're right 👍It's an amazing sake that has taken the name of a famous book. Denemon is a sake brewery brewed by just one person. The name comes from Michel Carouge's famous book "The Bachelor's Machine," which is cited as the bible of the master brewer. It is also related to Marcel Duchamp's "The Bride Naked by Her Bachelors, Even (a.k.a. The Big Glass)". When I think about the sake rice "Aizan," I can see the image of this sake being brewed with love while loneliness, loss of humanity, and the desire for barren love cross the mind 🧐. Today we are going to start with our special bird ❤️ no doubt👍and our favorite gateau rusk🥰Carouge & Duchamp, so it's like a French 🇫🇷... ❤️ By the way, this "bachelor" is not sweet at all 🤘 it is rather tangy and spicy, and has a sharp taste, leaving a bitterness that is typical of Aizan. But it is not too alcoholic, and is indeed easy to drink 🧐. When paired with the rusk with pomegranate on top, the sweet and savory flavors are gradually felt.
