Junmai Daiginjo for the brewery's 170th anniversary Thankfully, I was given a sample of three different rice wines to compare... Yeah, they're the same! I tried to guess blindly, but I couldn't hit anything... What they have in common is Mellow, fruity, sweet and juicy Lightly caramelized flavor. The differences, to put it bluntly Hitanishiki: strawberry flavor and clarity Miyamanishiki: Sharp aroma Hachitan-Nishiki: Strong sweetness with bitterness and astringency in the aftertaste According to the internet, Hitachi Nishiki is made with No.18 yeast, while Miyamanishiki and Hachitan Nishiki are a blend of No.18 and No.14 yeast...heh! The 3rd Bishu Competition 2025 Kansai ④ Sake I wanted to try at this event with Diachiku and Brooklyn kura I was curious about this brand that Nemuchi-san had tried at a Japanese sake festival before. It seems that the label has become more fashionable since the new owner took over, with an eye on export. A young man with two earrings explained about the sake to us, and we wondered if he was the brewer. Fresh, gassy, sweet and delicious. There seems to be no distributor in the Kansai region, so I sincerely hope that some of them will carry it! I told my neighbor's liquor store to go to Tokumasa Sou next time, but he said he had a connection with Sakaimachi 😅.

Ibaraki Pref. Sashima-gun. Hagiwara Sake Brewery Co. Toku-masamune Junmai-shu. We received a set of seven single-bottle bottles, so we will drink them. Here is the sixth bottle. I didn't think I could drink it again since I drank it at the Japanese Sake Festival. I will drink it cold. The color is clear with a yellowish tinge. The nose has a slightly ripe fruity aroma with hints of honey and caramel. On the palate, a slight ripeness aroma passes through to the nose, followed by a gentle Junmai-like dry acidity. It has a slightly aged feel, with concentrated umami, a chocolate-like flavor, and a faded brown rice-like aftertaste that lingers on the tongue. Nice Masamune that has matured quite nicely. Ingredients:Rice(domestic),Rice Koji(domestic) Polishing ratio: 60 Alcohol content:15

Today is eye exam day Just one drink at a local sake bar while waiting for the bus Tokumasamune collaborated with United Arrows to produce this sake. The rice is Ichibanboshi. Refreshing, sweet and sour. You can't feel the alcohol. It's more like juice. It can be likened to plum wine with water or apple cider vinegar mixed with water I remember being made to drink it as a child because it was good for me...

My first Tokumasamune from Ibaraki Prefecture. Yesterday I drank it chilled, but today I drank it hot. The peculiar taste I felt yesterday turned out to be a nice soft sweetness when heated. This is the interesting thing about sake.
