Kinmyo by Negami Shuzo is my new favorite sake.
The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it.
It is a different taste from last year. I prefer the taste of last year's, but this is still good!
Rumor has it that he makes it all by himself.
