It is that time of year again! This year's Mr. Summer Time was a grand presentation event, inviting circus members to the Kanmei Sake Brewery for a mini-concert of sorts. I couldn't go, though. The aroma of this year's product is a little subdued. I like that mewashi aroma, though. The mouthfeel is strong and dark, and the harmony of umami and sweetness is wonderful! It is a departure from the low-alcohol, light summer sake style, and is more like a munchy, dirty summer night. Despite the strong flavor, the sharpness of the sake is very refreshing, so it is easy to drink. Of all the summer liquors, this one is my favorite. Thank you very much for your kindness!

Summer sake from my favorite brewery, Kanbai! I'll have to drink it! The Kamidachi aroma is a fruity ginjo aroma, but it's moist and calm, very nice! The aroma of Kanbai's sake is so nice! The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

Purchased at the HYOGO SAKE EXPO. The aroma is of aged aroma like Shaoxing wine. The hint of gunpowder-like aroma. I think it is clean and easy to drink for an aged wine. I thought it would be good to drink with fruits and sweets. The acidity is a nice accent. Perhaps because it is a daiginjo, it feels fruity even though it is an aged sake.

Harima is a sake from Miki. Although unfiltered, it had a beautiful mouthfeel with no cloying taste. It was a truly delicious sake with a pleasantly cool flavor and umami.

Sake from a sake brewery in the northern part of the prefecture, located in the famous production area of Hachitan-Nishiki, Hiroshima's representative sake rice. The brewery has been working on it since the rice was first produced. The name of the sake is "Miwa Sakura" instead of "Miwa Zakura," which I had been misreading for a long time. It is said to be dry, but the quality of the sake is relatively soft. It has a nice sharp aftertaste and is easy to drink. It is quite my favorite 😋. I had it cold, but I think it can also be served warm.

Clear, but not too much. A reliable bottle with just the right amount of umami and sharpness. A mild and gentle aroma. In the mouth, the mild umami spreads like ripe fruit. While it has the richness typical of Omachi, the body is surprisingly light and the smooth aftertaste is pleasant, and you will find yourself drinking more and more. The aroma is subdued, and it is a perfect complement to a meal. It can be served chilled, at room temperature, or lukewarm. It can be enjoyed at any temperature, especially with peculiar cheeses and fermented foods. The gentle acidity from the Hiroshima Momiji yeast and the full flavor are in perfect balance. The finish betrays the image of "Omachi = mellow and peculiar" in a good way. Like a utility player, it is a dependable presence that naturally accompanies any dish or occasion.

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. I found my favorite Satochi at an Izakaya and couldn't resist ordering it😍. The smell of pears. It smells so good. It has a caramel-like sweetness and then a light sourness. This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.
