I couldn't find any draft sake, so I went with this one, which is hi-iru sake.
The aroma is of sake-like acidity and honeyed apples? It smells like sweet apples? It is quite sweet, but when you drink it, it is not so sweet.
However, when I sipped it, it was not so sweet. It has a moist mouthfeel, apple-like cotton candy sweetness, a strong umami, and a full-bodied bitterness, but generally speaking, it is very refreshing. This is a perfect match for Japanese food!
I also like that it's blended in a bit as the day goes on. It is not sweet even though it seems sweet, and the balance of umami and lightness is good and refreshing! It also feels more transparent.

Nanbu Toji Sato Koshi Special Junmai Shu Shiboritate Nama Shu
On a trip back to Aomori.
This was the first time I saw this sake.
It was easy to drink, with a slight classical sake flavor.
It is not a new sake, but it is a sake brewed at the Masugura brewery, created by Mr. Ki Sato, the toji of Hato Masamune, and Mr. Ki's father, who used to be a brewer at Hato Masamune.
The first aroma is slightly sweet.
In the mouth, it has a slight lactic acidity and a mild apple-like sweetness.
Tastier than last year's 😊.
Unusually for a sake from Aomori, I felt a little bit of nama-hashimoto-ness.
