Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

This is a gifted Junmai Ginjo, a sake from Nagano. It's fruity but not sweet in the mouth, and it has a crisp and well-balanced bitterness... This quality goes well with "X" cuisine, not just raw sake.

This is the recovery sake from the Furuya Sake Brewery, after they were devastated by a fire. They made 2,000 bottles with "Hitogokochi" rice they were just able to get from the local area. For me, it wasn't about the taste; I drank it as a local showing my support. ( It was delicious, of course!)

Sweet and bitter with a bitter aftertaste. It has a bitter aftertaste with a sweet and bitter aftertaste... It is a mellow dry sake... It does not have a cloying taste... It is a good match for strong flavored dishes... Although it is not the latest popular sake, it has a presence that says you are drinking sake. ...this is delicious in its own way...

January 2, 2024 Banquet at home. Drinking sake with my sister who is back home. The fourth and last sake of the day is The fourth and last sake of the day was Asahi Wakamatsu Junmai Sake sake. It was purchased at Amaha Shuho in Tokushima City. I had heard from my sister that it was delicious, and I was curious about it. I was able to get it when I visited the sake brewery in Seitama. I was finally able to get my hands on it when I visited Seitama's sake brewery. When poured into a glass, it had a yellowish When I poured it into a glass, it had a yellowish color and a sense of maturity. The color is yellow and it has a sense of maturity. It has a unique aroma like old pickles with a hint of acidity. The taste is sweet and rich, with a very mellow flavor. It can be served cold or at room temperature. It is best to drink it cold or at room temperature by itself. When heated, it has a softer flavor and is even more delicious. It tastes even better when heated. I like it best when it is warmed up. I like it best when it is warmed up and cooled down. It has an elegant sweetness that makes you think you can drink it indefinitely. It has a refined sweetness that makes you think you can drink it indefinitely. The taste remains almost the same 5 days after opening the bottle. The taste remains almost the same even after 5 days. The most recent one is from Sasaki Shuzo (Ehime). This is the most impressive taste since Yaegiku from Sasaki Shuzo (Ehime, Japan). The first day was a day of drinking. On the first day, it was served with jakoten (fish cake) and unagi kabayaki (broiled eel) from Yawatahama and broiled eel on the first day, and grilled sea bream on the fifth day. I enjoyed it with grilled sea bream kama on the fifth day. This sake is a must have for sure. I will definitely get this sake again.........

Whether you drink it cold or warmed, the sweetness of the rice flavor doesn't overpower the alcohol, and it has a great aftertaste. This is good. But it's only 20 degrees, so go easy on yourself.

Koikawa Shuzo Junmai Ginjo Kamejikohi 720ml Rice : 100% Kame-no-o produced in Yamagata Prefecture Rice polishing ratio : 55 Alcohol : 15.3 My wife entered this sake in a CS historical drama program and won it. It is said that this sake brewery is related to the writer Shuhei Fujisawa. This is also some kind of fate. Now, what does it taste like? It is quite classical. My wife said it was just fine. It is best to warm it up a little.

I love the dry carp river😍. Tasted it before mixing the nigori ❕😀😀 I think it's a bit alcoholic. I will mix the nigori and have it. The astringent taste and the alcohol taste from earlier is gone and the balance is great ❕🥰. It's a beautiful sake with a deep flavor that is replaced by the deliciousness and sharpness of the rice, and it's great. It goes well with all kinds of food, and is even good as a stand-alone sake ❕. ★★★★★

It was the day of Tachibana StampVal, so I went to only Ikoma among many stores participating in the event. I don't always go to other shops😅. I thought I was drinking it for the first time, but it looks like I had it last year at Harukas😅. It has a beautiful taste without a strong sense of maturity. Very easy to drink hiyaoroshi 😋. I've always wondered which came first, former Takarazuka Revue troupe member and singer Koshiji Fubiyuki or Koshiji Fubiyuki, but it seems Koshiji Fubiyuki's brand started in 1991!

I bought it as a souvenir for myself when I went on a trip to Niigata. It tastes beautiful. No bitterness at all. Maybe it's because it's from the fall season? The mild flavor is delicious. I love it!
