This is my first time drinking Hakutsuru-Nishiki. It is similar to Yamadanishiki and I couldn't tell much difference.
It has a gorgeous aroma, sweet and umami taste, and is delicious!
Koji rice is Yamadanishiki. Kake rice is Toyobai rice.
As expected of Toyobai, it is a gorgeous daiginjo. It is mellow but not too sweet. It is perfect for cold sake in summer.
Very rare Junmai sake from Kakita Shuzo at Furusato. Yellow color! It has a strong acidity and sweetness, but surprisingly it is a refreshing sake with no rice smell. It also has a slightly old sake feel. Interesting.
