Rice used is Yamadanishiki This sake has been aged for three and a half years. I had kept this sake at a friend's store when Corona first became popular, and I had lost track of the right time to go there. The other day, I finally met it. Although it was protected from ultraviolet rays, it could not withstand the severe temperature changes and had completely "aged". It was a shame, but he kept the store going strong, Thanks for saving it for us when we moved.

Rice used is Fumei Purchased at Fukuoka Airport There was also a limited edition sake for the airport, but I'll get back to that later. It's more like a sour or a juice, or something like that. It's not too sweet, so it's easy to drink. Depending on the food and the situation, I think this is also possible...

This is a first for me even though it is a local sake. My gra wife attended an event at the brewery and bought it for me as a souvenir. It has a sweet and sour aroma. It is basically dry, but the sweetness with just the right amount of rice flavor is delicious.

Welcome party, the second. Many local people do not know what kind of local sake is available, so as the Sake-no-Wa-Uwa-Uwa-tai, we brought some to the company's drinking party to convey the charm of this sake. This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening. Nakajima's gentle umami and Azuma's sharpness. It's a good taste. It's a nice taste.

(*^o^*)🍶🍶🍶🍶 Drink and Support 📣✊. We received sake from the Nakajima Sake Brewery, whose store and other facilities were destroyed by the Noto Peninsula earthquake and suffered extensive damage. This is the first time we have received sake from this brewery. The aroma is mild😊The flavor of the rice fills your mouth 😋 after a light sweetness, it finishes with a slight acidity and bitterness 😘. It was a delicious sake with a robust flavor, yet light to drink 😚👍.

When opened, it has a strong spicy impression and is quite harsh. After a while, the spiciness becomes moderate, and sweetness and umami can be felt. However, the spiciness comes slowly. It is a good sake to drink slowly.

☀️ This is a 12 year old aged wine 🍶. The taste is naturally classically sweet and aged. Alcohol has been added, but it is not crisp and has a strong sense of maturity. The alcohol content is high and the overall finish is for the experts 😎 and is unexpectedly "harsh" 🤔. I would definitely not recommend this taste to those who like sweet and savory 🥸.

Honey
The moment I drank it, I couldn't help but chuckle. It is sweet and tangy like light brown sugar or honey. It is sweet like sugar and has a sweetness like honey, and from there you can taste the sourness like green plums. It is sweet, refreshing, and delicious 🤤. Purchased by weight. Sake that pops like a pop label. Is this kind of sake good for aperitifs 🤔.

I bought a bottle of Hana-no-i special junmai sake, labeled "Thieving Cat," at Nishioka Honten in Makabe, which I stopped by on my way to the Tsukuba Rin-Rin Road on a rainy day the other day. I have had this sake before, but there is something different about sake bought at a sake brewery.

Homecoming Series 10 I went to Nishioka Honten in Makabe, Ibaraki Prefecture, and purchased a BY6 unfiltered, unpasteurized sake. It is a true Ibaraki sake made from Hitanishiki produced in Ibaraki Prefecture. It has an unadorned flavor, as is typical of Supin's sake. It is dry, with a short, refreshing aftertaste! The alcohol content is 17 degrees, which is proof that it is well fermented. The aroma is not assertive, and as a food sake it is first class!

Sweet and bitter with a bitter aftertaste. It has a bitter aftertaste with a sweet and bitter aftertaste... It is a mellow dry sake... It does not have a cloying taste... It is a good match for strong flavored dishes... Although it is not the latest popular sake, it has a presence that says you are drinking sake. ...this is delicious in its own way...

The rice is Fukunokou. This is also not found in Kansai, so I bought it. The aroma is slightly pineapple. It is fruity but a little dry and refreshing. Slight sweetness. I was told it was dry, but I didn't feel it was that dry. It's light, but it may not be enough for some people.

Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

This is the recovery sake from the Furuya Sake Brewery, after they were devastated by a fire. They made 2,000 bottles with "Hitogokochi" rice they were just able to get from the local area. For me, it wasn't about the taste; I drank it as a local showing my support. ( It was delicious, of course!)
