It is a light nigori 26BY of Iwo 🍶. First, cold sake. The top aroma is that of old chests 😂. In the mouth it has a hint of sweetness, but the aroma of old chests is strong😅. Next, warmed sake 🍶. When warmed, it smells like wet wood 😌. In the mouth it tastes a little acidic and the taste wasn't bad. Like the Chiyomusubi I had two drinks ago, nigori-style sake is said to be unsuitable for aging because the nigori part of the sake is altered and causes off-flavors. The last of the Koigawa drinking comparison is Dewanosato🤩, which is a beautiful bottle of sake. It has a clear impression different from the first light nigori 😀. I thought it would expand if I drank it warmed, but I couldn't wait and drank it cold 🤣. I think it has a little less depth than the other two bottles. The concept of Koikawa is basically junmai heated sake, so next time I'll wait and drink it heated properly. I guess it's the nature of drinkers that they can't wait even a short time in front of a bottle of sake 🤭. This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.

Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.
