Carp series we encounter often these days. Today it's the light blue Summer Carp. It is a draft sake made by polishing Nagano rice to 59% and brewed with glutinous rice in a four-stage hot-kettle process. This year, white malted rice was used for some of the malted rice to bring out a more refreshing taste. It has a firm, elegant sweetness reminiscent of cotton candy, white bean jelly fruit punch, lychee, and wasanbon. It also has a mild acidity, and its refreshing taste is truly a carpe for summer!

This is an extra dry version of "Yamama"! While "Yamama" has a sweet taste, "Oni Yamama" has a dry taste. It is said to have a good flavor, and is extremely rich in flavor and umami, with a mellow flavor that overflows in the mouth. Sake rice is Gohyakumangoku and Koshibuki, rice polishing ratio is 70%, and yeast is undisclosed. I had it well chilled ✨. Sake soaks in for the first time in a long time 😆 The acidity and bitterness precedes the taste and leaves a tingling sensation on the tongue. A rich, mellow sake that goes well with any dish👍 I paired it with corn tempura and potato tempura!

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.
