I had never had it before, even though it is a staple of this restaurant! A rich aroma of mirin (sweet sake). Sweet and tasty, sour and light syrup. The rice is fluffy and delicious afterwards. The flavor spreads softly in the mouth, just like amazake. Surprisingly, it is not so sticky. It is like a dessert sake.

The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

(The regular product has a ripeness, but this one is relatively refined. It looks light but has a solid core, and there is still a sense of ripeness in the back. It shows its full potential when heated. The richness comes out well. When it cools down, the sweetness comes out well. I bought it from a sake brewer, and when I asked for sakekasu, they gave me a lot of it! Maybe it's because I buy from the sake brewer sometimes. It is very delicious when it is baked!

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

Bought it with another sake. Well, I haven't had Yamatsuru for a long time 🤔. I heard the brewery was featured on a local Kansai town show and the online store server went down 😳. I'm sure they were influenced by Yoi Don 🙀. Purchased at a sake shop near Yamato Saidaiji station. A 10-minute walk along a plotted road will get you there. The brands they carry are Nara Sake, Gonin Musume, Shunshin, Yonemune, Kurumazaka, Takayuu, Ikegame, Mai-bijin, Miyako-bijin, Amanoto, Manrei, Furozumi, Shirokiku, Asahikiku, Dharma Masamune, Kurumazaka, Tsunekigen, Mizuo, etc. Obuse Winery's wines are available, but there doesn't seem to be any sake? Is it a dry sake with a strong umami and extract flavor? When the temperature rises a little, a little sweetness comes out. The sharpness is impressive. It is not my favorite type of sake because it tastes mainly dry. There is a graininess and nuttiness. There is a peanut butter or soybean flour-like atmosphere. I wonder if you can taste the sweetness if you drink it at room temperature. It's been almost a week and it's become more sour.

It is a versatile sake that also makes it delicious! I once thought that Kichiemon Nakamura was a great sake because my brother is a Kabuki fanatic, and this sake may have the same weight. If it's a regular sake, I imagine it would be a Junmai sake, and it would be a very bad one at that! I would definitely like to try the junmai sake! Mr. Ota is in Shinjuku! Mr. Ota went to a sake bar in Shinjuku, where the sake was delicious, and to Robeliya, a very deep bar in Shinjuku's Golden Gai. A 30-minute broadcast in two bars is too short!

Today is the annual New Year's Day visit to Kawagoe Naritasan Naritasan, and then to celebrate the golden wedding of my wife's parents. Dinner. The drink menu consisted mainly of wine, but there was also sake on the menu, and Naozane was recommended as a mid-meal drink. I was wondering what the same company that did Tenka and Shihu would do with the Meimon Shukai now that they've taken over the business? I was wondering what they were going to do with the prestigious sake associations, and then they released it 😊. Slightly effervescent, sweet and sour. Is it white malted rice? It's so acidic that I thought it was white malted rice. It also has a slightly dry atmosphere. It has a unique taste, but it is delicious. I wonder if the product for the Meimon Shukai that was sold before was Yuyamanishiki, but instead of using Yuyamanishiki, they used Gohyakumangoku to separate it from Honami.

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

It was the first time I had used it, but it was a strong sake. It is not an old taste, but it is not to everyone's taste. In my opinion, an erotic voice is something that doesn't give you a sense of comfort, and I think it has a sharp image. I like the label. Except for the difficulty of taking pictures.
