The newest brewery in Kochi Prefecture. There is now a distributor in Osaka, but it is too far away, so you can buy it at the antenna store in KITTE. The yeast used is CEL24 and Super CEL24. Fruity, pineapple-like, and slightly effervescent. The first half is sweet, but the second half is a bit bitter. I thought it was sweeter than another product from the same brewery that I drank at a previous event. I guess even Gohyakumangoku can be like this when CEL yeast is used 🤔. When the temperature goes up, it becomes a little more sake-like.

It's been a while since I've had a drink, and it seems like I've got an engine? The third bottle was a bottle of Carrara Carrara by Clouds in the Mountains, which I had bought the label for! As the name suggests, it captures the sound of the wind blowing down from the cold windy mountains of Kochi, I hear, and it captures my imagination even before I drink it 😋. The aroma is sweet, with a hint of white peach. In the mouth, a light, fruity sweetness spreads first. What follows, however, is a crisp, sharp sharpness reminiscent of an empty wind and a slight bitterness. The sweetness does not linger on the tongue, but recedes quickly, making it very easy to drink. There is not much of a sense of microbubbles, but the light spread after drinking is pleasant 😄. This lightness makes it excellent as a food wine. It has a gorgeous but clean aftertaste, so it does not interfere with the flavor of the food. It seems to be easy to match not only with Japanese food but also with Western food. I was surprised at the high degree of perfection of this sake, which is produced by a new brewery.

The acidity felt on the tip of the tongue is moderate, but freshness, sweetness, and luster spread simultaneously on the tongue, turning astringent and bitter when they reach the back of the tongue. The lingering taste is like thin asparagus. The luster is very assertive. The taste is quite different from BLUE 😄.

This is the fourth bottle of the accumulated contributions! As I poured, bubbles danced through the gulp, and those bubbles quickly disappeared. It smells sweet and spicy. Bon appétit! I thought it smelled acidic, but when I put it in my mouth, I felt almost no acidity and it is a gentle, soft drink. I don't feel any corners at all 🙂. The assertion is somewhat moderate sweet and spicy, and the light sweet and sourness spreads from the tip of the tongue to the middle of the tongue, but then disappears. Among the sake I've had recently, the drinkability is outstanding, and it doesn't convey much of the intoxication, making it quite a dangerous sake 😇.

Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!
