Looks like a new brewery: 🙇♂️ It's called sake, but it seems to be junmai (no mention of rice polishing ratio) 🌾. It rises with herbs, cream, and lychee ❔ pear ❔. The acidity is distinctive ❕, but it's not just light and fresh. But it's not just light, it's a solid, elegant, high quality sake ✨. I felt a very modern essence in a classic 🤔. And with this flavor, it is recommended to be warmed up to lukewarm ❔. I tried it 🍶. Lukewarm changes the atmosphere of the acidity, it's sweet and sour like hot honey lemon 🍋. It's refreshing to begin with, but even more so: ☺️ It's also a great food sake 👍. I recommend drinking it cold to lukewarm, but after trying many different ways, I thought cold or lukewarm would be better 🤗.

Today is a holiday. The weather is nice, so we went out for drinking (in the garden). I bought a bottle of Shizen-go Sawayaka at the liquor store! The price of a bottle of Shizen-Go is 2200 yen! I also picked up a 500 yen bottle of tuna off the inside at the supermarket, and we're going to drink it while admiring the dandelions! The taste is fruity, like the Shizenkou we drank the other day, but with a clean and slightly dry taste. It goes well with meals, and I would call it a fainting spell. Considering its cost performance, this may be the best!

This Sake has a full mouth feel and some sweetness at the beginning. The flavor of this Sake is bigger than other Seitoku Sake but it still has good balance. Very good with big flavor foods like mapo tofu.
This Sake has an initial sweetness and a full mouth feel. There is a hint of cedar as the alcohol clears my pallet. Very good with big flavor foods like yakiniku. Seitoku has many Sake that I enjoy.
This Sake is light, refreshing and easy to drink. I am revisiting this Sake because it has been a while since I last drank it. I enjoy the mild flavors of apple and melon with a clean, short aftertaste. This is a refreshing and well balanced Sake.

Of all the sake I encountered in Okayama Kurashiki, this was the best and cheapest. In the Bikan Historical Quarter, the price is based on the souvenir price, but this is a very everyday price. It was dark but not sweet, very mellow and dry, with a fizzy, bubbly taste, and none of the unpleasantness of aluzochu. The brewer explained a lot about it to us. I learned a lot. Thank you very much 😄. The person in charge personally recommended this as the best, and it was indeed the best.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!
