［Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

🙂 Next was Aozora. I thought it would be sweet because it was nigori, but it was dry. You would think it would be sweet because of the pink label. It was refreshing and easy to drink.

Not much aroma. Slightly yellowish. The sake is junmai sake, so you would expect it to be robust, but it has a light mouthfeel. The light sweetness and acidity are pleasant. It is only 500 ml, so it ran out quickly. I wonder if I should throw it away or reuse it after drinking out of the Italian bottle every time. I'm a poor person, aren't I?

Birthday gift alcohol, Part 2 It's called Sake no Wawa 50 check in. Ibaraki sake that Manachie hasn't had yet😊. It's clear, light, a little bitter and has quite a bit of sake feel to it. Hinode Tsuru Junmai Ginjyo Miyamanishiki 60% 15% 720ml 1980yen We also bought a bottle of Honjozo at the brewery, but it was a completely different impression. The Honjozo was a little peculiar. This one is bitter with concentrated flavor and acidity. It is not at all dull. It is not flashy, but rather calm and delicate. The sweetness is graceful and has the taste of a first-class sake. The rice is local Miyamanishiki from Hitachiota. I found out that the heir who returned to his hometown had designed, brewed, and engineered the sake in a new attempt. First time to drink Hokkaido sake outside 😭. And that's Kamikawa Taisetsu, I'm so impressed❗️. I've been to Hokkaido for a while now and I've never been to Hokkaido before. I want to go to Hokkaido in a while😍.

It is the first Kamikawa Taisetsu. I was attracted by the white koji and bought it. The aroma is of citrus and lactic acid, with some caramel. In the aftertaste, there is a touch of vinegar. National Sake Fair 2025 in Osaka_55 Fukui Prefecture Booth ⑦ Hatakeyama Sake Brewery is located in Imajo, an inn town in Minami-Echizen-cho, Nanjo-gun. Representative brands are Yuki Kirara and Hyakkibune. ◉Yuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. When I drink Sakahomare, I often associate it with yogurt with citrus.

Polishing ratio 40%, SakaHomare 15%, Sake degree +1, Acidity 1.8 3,630 yen Beautiful and muscat-like. I thought it was interesting to see the gap between the sake quality and that of the rough or first pressing 🤔. I forgot to take a picture of it, so I borrowed it from Mr. Neemuchi.
