According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.
