The umami and acidity mix well together, making it easy to drink even though it is a pure sake. The umami is backed up by a nastiness that does not insist on being assertive. It can be served with bonito tataki without garlic, but the garlic would defeat it. It goes well with tomato and lettuce salad. It brings the umami to the forefront.
Kirifuri-san was chosen as the J&N New Year's Eve Sake❗️ end of the year we were drinking apart from each other 🥲 so we decided to drink together once more this time 🤗.
We have already had the gold letter one, the blue letter one, the gold letter one more time at the end of the year, and now the red letter special junmai one.
This special junmai has the most concentrated rice flavor of all the Kirifuri series 😊.

The usual combination of acidity and sweetness! Maybe it's because I saw that it concentrates the flavor of the rice, or maybe it's a little sweet, but it's definitely delicious 😋.
And the snack of the day was leftovers from the fridge and a recording of the WBC⚾️ special broadcast at the end of last year😄.
The video recordings of the Samurai's sufferings, exploits, and the joy 🙌 that lies ahead make a good snack 😚.

Domaine method, Sakura City, Tochigi Prefecture. Completely additive-free, made from rare ancient rice instead of sake brewing rice. Organic Kame-no-o, 90% polished rice.
Slowly and painstakingly growing natural yeast, and the wooden vat brewing is excellent. Tochigi is a place I have deep feelings for, having moved to the area for a bit as a child.
Where I lived, the winters were bitterly cold and there was a strong gale. The strong north wind from Watarase used to scare me as a child.
I wonder how difficult it is to live in Japan with its high temperatures, humidity, and frequent natural disasters. Delicious. This is my favorite.

J&N-san invited us to their first off-line meeting in October when they came to Hiroshima on a trip.
We received a bottle of Senkyu's local sake "Kirifuri" at that time!
We were so touched by their love for Tochigi that they brought this sake, which is never available in Hiroshima, along with a cooler in a bag to keep it cool 🥺.
We chose the most memorable sake of the year for our last bottle of the year🤗.

The end of the year for J&N is still Tochigi sake, and we were reminded of its greatness at the ‼️ Kenmin Kai, and this year will be the third bottle of Kirifuri Sake 🤗.
At the end of this year, Jay and Nobby will be spending time with their parents separately at their respective parents' homes from the 30th to the beginning of the new year, and will meet again 🥹 in Utsunomiya on 1/1.
So the plan for the end of the year is to buy Sandesi and bring them to each other's parents' homes!
They are in Ichikawa City and Noda City in the same Chiba Prefecture, about 30 km away🙂.
