When I say Niigata I get the impression that it is sharp and crisp. This is a full-bodied sweetness that clings to the palate. Preconceived notions are not good.

It is good as an early summer sake with its piquant and slightly effervescent taste, sweet and sour aroma, and clean and crisp taste. It was even better since the weather was a bit sweaty. Serve with duck skin and myoga with ponzu sauce and native buckwheat noodles. The alcohol content is 14%.

SAKE Park (4) There is a corner of the project "Don't stop Noto's Sake", which is also a choice! A series of collaborations between Noto sake breweries and other sake breweries, and from among them, a collaboration between TANIZUMI (Noto: Tsuruno Sake Brewery) and Nagasaki: Fukuda Sake Brewery (Fukkai)! Sake rice and malted rice from the collapsed brewery in Noto were used in Nagasaki. The rice and koji from the collapsed brewery in Noto were brought to Nagasaki and made into sake at Fukuda Sake Brewery in Fukkai. While listening to such a story, This is a refreshing sake, with a slight tangy sourness. And as I drank it, I could also taste a little sweetness. Ganbare! That's it for now.

I happened to get this sake by chance. It doesn't have the glamour of today, but it tastes of rice and is delicious. I would like to drink it again.

mother🆚 and daughter Sake brewed by a mother and daughter in separate tanks. It seems to be the daughter's version of this sake. I didn't know that until after I finished it😅. It was dry as described. It was better at room temperature than heated 🍶. I could feel the umami in the dryness, I could enjoy the dry taste without any pain ✨. The brewery was completely destroyed by the earthquake 😢. I will support them by drinking it first.

A Tottori brand that is no longer produced 100% strong sake brewed with brewer's yeast. R1BY, it's already old sake, and it's slightly oxidized and has a yellowish cloudy color. It has a unique taste with a strong acidity, which is very addictive.

Alcohol content: 15 Rice used:Undisclosed Rice polishing ratio:50%. At a sake meeting. It has no aroma or taste as if it were a Junmai Daiginjo. In the best case, it is a food sake that goes well with anything, but if that is the case, you can just drink Kouzen Nyosui. It tastes light. I checked later and found that a 4-gou bottle of Junmai Daiginjo is reasonably priced at less than 1,000 yen. It might be a good choice for those who don't like sake.

It's been a long time since we met. Sanin Togo I was struck by the richness of the first time I drank it, and I wanted to drink it again. The color is like the color of whiskey, the smell is mellow, and the taste is mellow. It was delicious. I had it at room temperature this time, but next time I would like to try it hot. I should have taken a picture of the sake poured into the cup!

@sakebar Fukuzo Fire-brewed sake using Fukuoka Prefecture's original yeast called F44. Slightly sweet aroma of 🍍 on the nose. The palate is slightly sweet with a hint of 🍍. The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. I am a little curious to see how it would be like if it were a fresh sake. It was delicious ✨🍍.

The bottle on the right was opened three days ago. The left is a new bottle. When cold, it is a full-bodied sake with the umami of rice, as if the white rice is being smothered. When warmed up, it became sweeter and softer. It was a relaxing taste.

I asked the owner what kind of sake goes well with seafood, and he recommended this one 💁. Let's take a look. The nose has a hint of acidity and alcohol, with a grain-like aroma at the back. In the mouth, there is a hint of rice sweetness and acidity with a crisp finish along with umami. Serve with squid sashimi. The texture is sticky while being firm, and the sweet flavor enhances the sweetness and umami of this sake 😋😋. The first drink of the day. I drank it cold. It is fruity and has a sake-like taste. It is relatively light and easy to drink. I read in another post that it has a plum aroma when heated, so I thought I'd like to try it.

I bought it when the brewer came to Takashimaya. I've never talked to Mr. Nishide because of bad timing every time😅. The name comes from Moro-chan and Mi-chan (Moromi🐱) that he keeps at the brewery. The name is derived from Moro and Mi-chan🐱. Sourness and appleiness. Gentle sweetness. I got the impression that it is a low-alcohol, sweet and sour sake. I'd like to try the light nigori sake that Hirupeko-san was drinking 😋. I feel it is a sake that is easy to drink and has a unique atmosphere of Shunshin at the same time. I thought it would be suitable for warming up sake. If you drink it at room temperature, you'll get more apple flavor, but you'll also get a stronger woody aroma.

Tasting at Takashimaya. Shunshin's brewer always comes to the store, but I never get a chance to talk to him... Again, I was talking to another customer, and the department store staff took care of me. I drank the following HARUGOKORO Another Series Special Junmai Yellow Slightly sweet and gentle impression. There was also a bottle of this sake, but it seems to have been sold out. A little expensive. Moromi This is a sake for Moro-chan and Mi-chan, the cats kept at the brewery. I bought a packet because it was so cute. No picture because it's too cute. I heard they have a draft version of this too, so I'd like to try it someday 😽. Shunshin - Shunshin Nama Hashiroshi Junmai Koshihikari It has a strong acidity and a unique complex flavor, and is quite peculiar. It can be served at room temperature or warmed up. It left the biggest impression on me. I think Hirupeko would like it 🤔.
