100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. Wine yeast is great because it makes rice sweet and sour! The top aroma is of grappa and rum raisins. When swirled, it smells of plum. The flavor is very sweet and sour, like plum wine. The color is a pale yellowish hue like lemon pulp, the legs are short and weak.

It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

a gift It was the first time I had ever had a fresh one in Honjozo. The mouthfeel is like mint? I've never had it before, but it's interesting. I think it leaves a little bit of a cloying taste at the end.

Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. Maybe I'll give it a try after tomorrow. It's good to enjoy long-aged sake sometimes. ☺️

2020/11/06 ⭐️⭐️⭐️⭐️⭐️ A subdued but green apple-like aroma. The mouthfeel is refreshing and smooth. It is followed by a rich sweetness and flavor. Spiciness and acidity are rather subdued. It finishes off nicely with a slight bitterness. It was easier to drink than the ginjo I received before.

@Jizake Miyukiya Rice used is Yamadanishiki Probably my first visit to Ryujinmaru: ❣️ I had no idea that I would be able to find it even after wandering around liquor stores and the internet so much, but I guess there are places where you can find it. Anyway, it's massive, very drinkable, and delicious. ‼️ It has a slightly peculiar sweet aroma and a matured flavor. It is full-bodied but also refreshing. It is a sake that should be drunk face to face. The back end is nicely integrated with just the right amount of bitterness, and although it is heavy, there is no cloying taste, so it goes in easily. It might be interesting to let it sit for more time. This is an unbearable sake. Can I drink it again?

Lunch at Omiya (=lunchtime sake) I thought about going to Izumiya, a long-established restaurant with a Showa-era atmosphere, but I decided to try something new today. There is no special sake on tap, but..., Sashi-Ogi Koyama Honke's Kinmon Sekai Taka Ginjo 50, which is widely distributed in supermarkets and convenience stores in Saitama City. It is also a limited edition sake for Saitama Prefecture, and I personally posted it for the upcoming Saitama Prefecture Sake 200 check-in.

Purchased at Yokohama Takashimaya Rice used is Kame-no-o type Koshihikari produced in Kasama City The alcohol is a little strong, but the taste is smooth and not like an unfiltered draft. It has a good balance of sweetness and bitterness and is refreshingly clean❣️. There aren't many unfiltered sake that are good all-around food sake, but this one seems to go well with all kinds of food❣️.

Hankyu Brewery Festival🍶9th Brewery Arrival of Mr. pyonpyon! The four of us are tasting 🎶. This is the oldest brewery in Japan, dating back to the Heian period ✨. Yukinomai Nama Sparkling Junmai Daiginjyo Namaekase Namaekase Junmai Daiginjo Kurokin Unfiltered Nama Sparkling is refreshing, sweet soft and easy to drink 🫧. Sparkling has also been made for 180 years 😳 And Kurogane! It tasted like bitter chocolate🍫. I was surprised by the richness: ‼️ I could tell from the brewery's story that they teach their techniques to wineries overseas and that their sake is made with an awareness of overseas markets 😊.

This Sudo Honke is a very old brewery.... I was curious, so I took a peek on my phone after buying this sake. So this is the first brewery to release a sake with a "nama" (raw sake) flavor! This sake also has the word "Nama" written on it lol. And the fact that it's made using the traditional method of honjikomi sounds kind of awesome! What surprised me is that this is 20 years old💦. I don't know what changes have occurred over the past 20 years. It starts with a unique aroma, then comes a caramel-like sweetness, and just when you get used to the unique aroma, the rice flavor spreads. I think this aroma is different from the ginjo aroma, so maybe it has been aged and the aroma has changed. I don't dislike it❤ It's delicious❤. Aroma that's almost addictive, in a good way! 👍 I think they are making only daiginjo now, so ginjo might be precious.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

Purchased at Dogo Onsen. While buying Botchan dango, I looked at the sake corner and saw a very cool label, so I bought it! When I opened the bottle and poured it in, the aroma was subdued and refreshing. The aroma is gorgeous and citrus-like, with a hint of brewer's alcohol. It has a smooth, tangy, light and dry taste. I was a bit surprised because the Ume Nishiki and Kagawa's Kinryo I drank during my trip were sweet! On its own, it is a simple dry sake, but when paired with a meal, it gives the impression of a soft, grain-like flavor that is easily felt. It also has an astringent taste in the aftertaste, which combined with the astringency of the label, made me think of "sparrow return" instead of "swallow return"...⚔️ I remember that there were many breweries other than "Iyo Kagiya" and "Ishizuchi" that I didn't know about, and I couldn't stop looking at them. Ehime is a great sake brewery, isn't it?

Toyama, Himi city. Takazawa Sake Brewery Co. Ariiso Junmai-shu Akebono Hatsuarashi This sake brewery in Toyama was hit by the earthquake on New Year's Day. After all, drink and support! We will drink it cold. The color is clear with a slight yellowish tinge. The aroma is mild and slightly apple-like. The mouthfeel is gentle, and the wine stays in the mouth for a short time before slipping down the throat. The texture is hard and minerally. Very refreshing! The brewery is located in Toyama Prefecture, but it seems to have been severely damaged, so we drank and cheered. Rice is Shunyo and Yuyamanishiki. Jun Dai is in the 1500 yen range and very cosy👍 When it comes to Niigata, I love Kafuda-shu, it's very similar to the acidity of that Kafuda-shu 😋. I love Niigata, but I can't tell if it's sweet or spicy 😅I found myself drinking 3 gou of it, so it's good 😋. But I think it's the winner 😆. I'd like to try the other ones though👍

Limited edition sake. The "sanzui" seems to refer to the kanji character sanzui bias. The label is cool ✨. Sweet and refreshing aroma reminiscent of melon at the entrance. In the mouth, the sweetness of the rice spreads with a lot of fruity aroma and gentle acidity in the beautiful mouthfeel. Finishes gently with soft acidity. It seems to be a new line of sake called Sanzui, and the taste is very different from the image I have of Kashiwa Roshi, which caught me off guard. It is an unfiltered, unpasteurized sake made mainly from Gohyakumangoku. The acidity is emphasized and it is very modern and fruity. It is light, but still has a good taste of rice. Is this due to the Niigata G9 yeast? It is indeed a little reminiscent of Abe. There are many breweries in Nagaoka that are traditional breweries (recently, Kubota is trying to be more modern), but I don't remember drinking this kind of sake before.

Mr. takeshon advised me that even if I abstained from alcohol halfway through the checkup, it would not affect my figures. I only abstained from alcohol the day before, when I got home late and it was past my drinking time, and went to the checkup with my body as normal. ✌️ Yes, there is no doubt about what Mr. takeshon says. Bad things are bad. I was told my blood pressure was too high, especially the low one, which I was concerned about 😅 I had to re-measure it 3 times 😅. If I'm going to quit drinking, I need to be as thorough as J &N for a month or so 🤣. And I vaguely remember the exact numbers from last year, but my height has shrunk by millimeters and my abdominal circumference has grown by centimeters. This is what I call aging 🥹. I should refrain from drinking at this point, but I opened a bottle of Jukishin Usu-nigori today to open the fridge: ✌️ Well, this one tastes pretty good: ‼️ It has a soft sweetness in the mouth. It has a soft sweetness in the mouth and a refreshing sharpness. No, there are more light nigori sakes that I like, but this one is above standard. Jukishin, I must try their other sakes too 😊.

Purchased while traveling in Ehime Prefecture. I did not expect much from the name, but it was quite tasty. It has a good balance of sweet and spicy, and can be served cold or hot, but I especially liked it hot. I especially liked it when it was heated up. It has more umami and sharpness when heated. I would like to try another Junmai from this brewery as it is a very cost-effective sake.
